Gimbap is one of the most popular Korean snack menus. From little gimbap to nude gimbap and from vegetable to beef, gimbap has gone through makeovers and new gimbap brands have appeared and disappeared every now and then. If you live or visit Daegu, take time to drop by Dongseo Market in Sinam-dong, Dong District. There at the edge of the market, you can see Very Special Gimbap. The yellow rice will captivate your eye first. The yellow is made by turmeric powder known to be good for diabetes, dementia, immunity, pain and inflammation. Try it or accompany spaghetti, fish cake, spicy pork wrap, tuna mayo or fried kimchi rice to satisfy your hunger. You might be surprised by being served a 5 hour boiled beef bone soup as a side instead of udon soup. “I spent a lot of time for developing menus before launching the business. 10 kinds of unique menus were finally brought up and the price was good. I traveled the whole nation in search of good dried laver, a core ingredient of gimbap, and chose organically grown ‘moosankim’” said Kim. Strange it might sound but Kim works in taekwondo uniform. The reason is that he used to be a taekwondo player for 15 years of which 14 years as an instructor. “Not every taekwondo players can keep their profession as a job. It is a thorny and rocky road. But the spirit of taekwondo never disappears no matter what you do. It is always alive and here at Very Special Gimbap too. That’s why I wear the uniform.” It is worth knowing that Kim seems to use the spirit not only at Very Special Gimbap but for children in need: he donated 11 million won of the money gift received when opening the restaurant in March last year to Daegu Dong District Office. “I received a lot of help since childhood and I want to return it to society in gesture of thanks. When I first opened Very Special Gimbap, my goal was big. Now, I made the goal small and I can be happy if Very Special Gimbap will become famous for both gimbap and donation.”
