It is reported that single-household persons are one out of four households in Korea. We can easily witness nowadays to see a person eat, drink or travel alone. And they are called ‘singlesumer’ – a neologism coined with ‘single’ and ‘consumer’. If there were regarded as minority of our society in the past, they are now becoming the trend setters who are eager to look for simple, better and reasonably priced products designed for them.

Opening its door on May 2014 in Sillim-dong, Seoul, ‘Master of Ssaum’, a bossam (Korean pork cabbage wraps) specialist, came from recognizing the need of the increasing number of singles. Unlike many other existing restaurants that offered simple snacks such as noodles and rice rolls, Master of Ssaum did with ‘bossam’, relatively expensive and commonly served at least for two persons. And it was a hit.

CEO Park Yo-ha says “I am probably the first to introduce bossam for singles. And this also caused me a lot of difficulty as I had to build the system from portioning to price through trials and errors. But I made it anyway and I’m glad to say that singles recognized the value of the menu.”

In the preparation stage, Park traveled far and wide to find famous bossam specialists alongside his self-study on Japanese food culture for singles. Korean medicinal herbs and fresh fruits and vegetables were added to boiling the pork in order to create smoothness of the meat texture and pleasant smell. The result was that young people in their 20s and 30s gave an explosive response and the restaurant drew average 400 to 500 diners a day.

It does not require a big space to run the franchise but only a 39 square meter space would suffice to make a decent profit as all ingredients are directly delivered from the head office. 

“Make your success with Master of Ssaum”
It seems natural that Master of Ssaum rapidly rising onto the main stage of the food franchise in Korea. Master of Ssaum opened whacking 10 branches within 6 months of launching franchise by August 2016 and the number has counted to 23 nationwide as of June 2017. 

Taking the momentum of an attack, CEO Park expanded the menu to ‘samgyeopsal’ - grilled pork belly – in addition to the existing one man bossam, garlic bossam, ssaum bosssam and soy source bossam. All of Master of Ssaum branches are drawing a satisfactory response and result according to Park.

Currently, CEO Park is focusing on development of new menus, building a more effective management system and maintaining the consistent taste on all branches with a greater ambition to grow Master of Ssaum as one of the most successful food franchises in Korea. 

Park says “Satisfying both diners and business partners is top priority of Master of Ssaum. Quality taste in reasonable price and win-win management, therefore, are a must to be executed at all time. And I’m confident to make a bigger success in the coming years.”
