Qooqoo, from a sushi buffet to a family restaurant
Continuous development of menu and improvement of service to gain popularity
CEO Yeonggi Kim of Qooqoo

Fresh ideas to pioneer overseas market and opening the 80th branch
Korea’s buffet industry is dominated by major companies. However, Qooqoo broke into the market and is about to openthe 80th branch with its competitive price of around $10 as well as 50 kinds of sushi in the menu including salmon, tuna, eel, sea bream, shrimp, smelt, scallop, trumpet shell, crab, meat and egg, Chinese and Korean food including rice, noodle and meat, Western food including pasta, pizza and salad, and fresh cream, toppings, waffles and cookies for desert. CEO Kim said “Many restaurant owners worry about the expensive ingredients and the same franchise store nearby. But they can fix the production cost under 40% of the total sales with us and we also keep a good distance between the stores. Our interior is more like a café (including kid’s café) and it is particularly popular among housewives.”

Thanks to Qooqoo’s management system of reducing the closing down rate to 3% and repaying the initial investment within a year, Qooqoo won numerous franchise awards and many branch owners run 2 to 3 branches at the same time. Encouraged by this success, Qooqoo opened the first overseas branch in Yanbian, China last year. CEO Kim said “The 2,400 square meter Yanbian branch is experiencing a rapid increase of sales and we also have finished registering the brand in the US, China in addition to Korea.Currently, we are planning to open 4 new branches in Beijing, Shanghai and Dalian. Meanwhile, the branch in Brisbane, Australia is spreading Korean style semi-buffet franchise in the region and we are proud of it.”

Family restaurantmade with customer’s wants and needs
Qooqoo’s secret of success ascribes to the taste in addition to interior, management skill and staff training. Also, director Myeongsook Kang’ continuously develops sauces and fusion menus. Qooqoo originally was a roll and sushi buffet but turned into a family restaurant based on the economic set menus for two people as well as differentiated steak set and raw fish set for lunch and dinner. CEO Kim said “We are centered on the main menus and deserts rather than the kinds of drinks. We provide a variety of seasonal fruit and hot food. But the biggest source of our pride comes from a variety. You can literally enjoy almost all kinds of food at Qooqoo. Lunch menu in particular is designed for housewives with children and we are receiving excellent feedbacks from them.” Meanwhile, CEO Kim has been actively participating in social contribution. He is donating rice to neighbors in need and is planning to donate the charity fund gathered in the stores to help childhood cancer patients. Director Kang, on the other hand, is providing free ‘Qooqoo Cooking Studio’ class for housewives based on her 30 years of experience in the field. In this once in a week course, housewives can learn how to make the meat, fruit and vegetable stock, how to trim the seafood and how to cook at home. Power Korea wishes Qooqoo a great success.

Where did the innovative idea of Qooqoo come from?
I have worked as a home cooking lecturer for 30 years in Cheonan and Hongseong. I have a wide knowledge in Korean, Chinese, Japanese and western cuisine and it was really helpful when opening Qooqoo. I’m still giving lectureslocally andplanning to provide a free wellbeing home cooking lecture soon.

What’s the secret of your success?
I didn’t know that young people liked sushi that much at first. I always remember CEO Kim’s principle that a menu must always be new and challenging. That’s why I added a new menu one by one such as fries and free beverages and upgraded the quality of salad. I value our customer’s opinion very high and reflect their wants and needs all the time. I can tell that our directly managed stores actually are better than luxury hotel restaurants.

What’s your advice for startups?
A new store must repay the initial investment within a year to survive. The next step is excellent customer service and diligence. I once worked in the Ansan branch as cashier, taking reservation, cleaning, etc. you name it. Qooqoo never challenge customer’s complains and the headquarters take all responsibilities even if it is a branch’s fault. Also, all of our staff is working like a family.
