Professor Kim Dong-su in Hotel Culinary & Food Service Management Division of College of Tourism & Sports at Catholic Kwandong University

Field-centered customized training
Located in Gangneung City in Gangwon Province, Catholic Kwandong University has been fostering talented students and contributing to raising of national competitiveness under the spirit of catholicism. Among many departments of the university, Hotel Culinary & Food Service Management Division at College of Tourism & Sports is fostering global level professional chefs and specialists in the catering & food service industry. Kim Dong-su, the dean of the college said "in accordance with ever changing food industry in Korea, we are actively carrying out specialized curriculum for hotel culinary and food service management. We provide industry-oriented training to secure differentiation and competitiveness against other universities."

For this, Kim renewed the four existing laboratories, added Coffee Laboratory, Menu Development Room and Sensory Test Room and satisfied necessary equipments and subsidiary facilities to build an effective training infrastructure. Kim said "satisfying necessary equipments and facilities are a must for students to have practical training and to raise their competitiveness. Through this, we can realize industry-oriented training as well as increase employment rate. In the long term perspective, this infrastructure can be used for various national qualification exams which makes the college more unique." As to prove this advantages, there are already 16 students studying in the PhD course and 21 in the master's course within the 2 years of opening the Graduate School of Hotel Culinary Arts & Food Service Management.

Taking the first step toward global Korean food
Under the goal of promoting the Korean food as global, Kim is ardently working on revision of curriculum that fits to the current trend in the dine-out industry, promotion of out-of-curriculum programs for both national and private qualifications and opening of the laboratories for students as well as giving a support for students' self-development. But the part Kim is focusing on above anything else is to enhance industry-academic cooperation and high employment rate. For this, Kim is providing field-centered training and internship opportunity for students in cooperation with CJ Foodville, Pulmuone, Outback, VIPS and Bulgogibros. He is also inviting industry specialists to the class on a regular basis. 
Meanwhile, Kim is serving as Chairman of Foodservice Management Society of Korea which analyses current trend of the dine-out industry and develops new menus and business models to pioneer foreign markets. Kim said "for most tourists of both home and abroad, food can give a crucial impression about the region, or the country, they visited. For this reason, we will give our utmost effort in providing global level Korean food and services."
