The right food in Korea served with traditional way of growing bean sprouts

Lately, appearance of diverse cooperatives has positively changed the form of consumption. Among others, food culture is further ripening centering around Hansalim Consumer Cooperative, Nature Dream, Doore and Happiness-centric Consumer Cooperatives. With these consumer cooperatives established by consumers gathered together, they are able to be provided with fresher products as the merit keeping a higher standard for them because of their principle for direct transaction with a producer. Especially, Harnul Ocher Farm has been warmly received by answering the demand of consumers who would like to choose the right food even if it is a little higher in price. We met president Kwak Seok-kyu of Harnul Ocher Farm (www.harnul1004@korea.com), who is devoted to filling our table with healthy food, to hear about his farm. 

‘Hawngjui bean sprouts and ocher green bean sprouts,’ the result of eco-friendly pottery jar combined with ocher water 
President Kwak Seok-kyu, who is out to provide a healthy food based on 100% pure domestic material, has an unusual career in life. He got involved in ocher by chance. He mastered computer CAD program in 1990 as a major of factory automation system and acted as the first specialist at CAD design automation in our country. At that time, working as advisor on ocher-related equipment he thought highly of the vision of ocher. Then, he failed in business through IMF crisis, but with his idea about a new business using ocher, he decided to grow bean sprouts using ocher water. After numerous trials and errors he set about selling products earnestly in 1999. “In the early period, I did nothing but sell them traveling around apartment complexes. However, it went viral because bean sprouts in traditional growing method couldn’t be the same in taste as those from high-tech mass production. With an increasing number of consumers, I came to supply them to consumer cooperatives.” 

‘Hwangjui bean sprouts’ shown by Harnul Ocher Farm for the first time makes material of domestic Juinooni bean indigenous to Kangwon province. Of these beans known for rich isoflavones, he handpicks only blue Sokcheong Juinooni beans rich in nutritional value, which is characterized by its blue head. Besides, this product grown in the traditional way using a pottery jar uses ocher water made by mixing ocher collected from over 1 m underground with water in the ratio of 2 to 8, which gives more tasty flavor. Since it uses ocher water rich in mineral, the root of bean sprouts looks yellowish, but you can use it without worry because it doesn’t mean being wilted or damaged. His ‘ocher green bean sprouts’ made by using domestic mung beans advanced to consumer cooperatives earlier than ‘Hwangjui bean sprouts,’ serving to promote the name of Harnul Ocher Farm. While all products of Harnul Ocher Farm make it a rule not to use any agrichemicals or bio-stimulants, it is so hard to grow green bean sprouts without agrichemicals that it practically made ‘ocher green bean sprouts’ even more famous. “Though the blue head of bean sprouts may not be familiar and their yellowish root may look unattractive, these are really beneficial to our body. For the future, too, we are going to grow pure domestic food based on the best water and remain as an enterprise conducive to the customers’ health.” 

Nationwide circulation network will be constructed starting with this April tasting party.
Traditional method of growing bean sprouts means the way of putting a waterspout under with a jar of bean sprouts on it, scooping water in the spout with a gourd at pleasure to give to the jar and scooping the water coming down from spout upward over and again. President Kwak Seok-kyu was able to keep to this traditional method by adopting ‘individual circulating water spray’ method using water pump. In case of ‘individual circulating water spray,’ however, it involves the pre-trouble of picking out beans by hand every time because it raises water coming down back and because if there are bad beans in the jar bad water comes down, and lifting the bad water back affects all the bean sprouts in the jar. Besides, there is difficulty repeating the bothersome process of cleansing, drying and reassembly by breaking down pumps harvested once one by one for thorough sanitation, He is also keeping to a pottery jar hard to handle in order to have the product even a bit less influenced by environmental hormone expecting little notice from consumers. “This method takes over three times of personnel expenses compared to the other existing growing methods, putting up the cost of bean sprouts as a drawback. However, my usual management philosophy says that there is no compromise if it is the way to revive the own taste of bean sprouts and add nutrition.” 

In the meantime. Hwangjui bean sprouts from Harnul Ocher Farm is scheduled to be supplied to Hansalim Consumer Cooperative, too, following Doore and Happiness-centric. For this, president Kwak is going to meet consumers in person holding a tasting party and demonstration of cooking from April touring around each shop. “I am very pleased to be able to supply products to Hansalim Consumer Cooperative which was my target from the beginning. This year, at this important turning point of my career as an entrepreneur, I will be devoted more to promoting the excellence of our ocher bean sprouts and green bean sprouts.” Expecting more enterprises of putting the consumer’s health first to appear in the flood of the poor food threatening the people’s health, we sincerely give a big hand to president Kwak Seok-kyu who has never been deviated from his own path.
