신의 약초 ‘삼채’로 국민 건강 책임져 나갈 것

농업이 미래다. 굳이 농촌의 경제적 가치를 계산하지 않더라도 예상 가능한 식량위기의 시대를 앞두고 농업은 생존의 근본문제를 책임져야만 한다. 우리도 이제는 농업을 사양 산업으로만 평가절하하지 말고, 미래 산업으로 전략적 가치를 높여 농업의 르네상스를 이끌고 나아가 한국 경제의 성장 동력으로 삼아야한다. 문제는 경쟁력이 될 것이다. 이에 전문가들은 자원순환적이고 환경친화적인 농업이야말로 현재 우리가 겪고 있는 환경적 위기와 경제적 위기에 모두 대응할 수 있는 미래 산업이라고 주장한다. 국내에서는 ‘신의 약초’, ‘신비의 작물’이라 불리는 희귀 작물 ‘삼채’의 재배가 그 가능성을 활짝 열어주고 있다. 삼채의 선구자로 불리는 선운산약초농원(www.sunwoonsan.net)의 박세근 대표를 만나 ‘삼채’의 탁월한 효능과 무한한 시장성에 대해 알아본다. 

교육공무원에서 삼채 전도사가 되기까지...

선운산약초농원의 박세근 대표는 전라북도 고창교육지원청 교육장, 한국폴리텍V 고창대학 평생교육원장 겸 전임교수 등을 역임하며 지난 39년간 교육공무원의 길을 걸어온 남다른 이력의 소유자다. 은퇴 후 전원 속에서 제 2의 인생을 설계하고 있던 그는 8년 전 고향이었던 고창에 농장부지 1만평을 구입하고, 특유의 성실함으로 약용식물관리사, 건강식이요법사, 건강관리사, 발효효소관리사, 조경기능사 등의 자격증을 차례로 취득했다. 이후 본격적으로 ‘선운산약초농원’을 운영하며 다양한 약용식물과 나무 등을 재배하기 시작한 박 대표는 현재 삼채의 효능을 널리 알리고 대중화하는데 힘 쏟고 있다. 우리에게는 낯선 이름의 삼채는 미얀마 북부 히말라야 자락 1,400m이상 고산지대에서 자생하는 약초로 단맛, 쓴맛, 매운맛, 세 가지 맛이 난다고 해서 삼채 혹은 뿌리부추로 불린다. “삼채는 몸에 좋은 유황성분이 마늘보다 6.5배가 많고, 사포닌성분은 인삼보다 60배정도 많습니다. 혈행 개선 효과와 면역력 증진의 탁월한 효과가 있고, 당뇨는 물론 향균 작용이 있어 아토피 개선에도 도움을 줍니다. 무엇보다 좋은 것은 일체 부작용이 없다는 점입니다.” 경남도농업기술원이 발표한 시험분석표에 따르면 국내에서 재배되는 삼채 100g에는 600㎎의 풍부한 식이유황이 함유되어 있어 원산지인 미얀마산보다도 높은 품질을 자랑한다.   

2010년에 처음 국내에 소개된 삼채는 인삼보다 우수한 효능을 가졌다는 입소문이 나면서 비상한 관심을 집중시켰으나, 사실 제대로 된 재배법을 알고 있는 사람이 전무했다. 이에 박 대표는 ‘삼채연구소’를 설립하고 미얀마를 수차례 방문한 끝에 한국의 삼채 농사 매뉴얼을 완성할 수 있었다. “삼채는 희소작물로 부가가치가 높아 지역특산물로 성공할 가능성이 매우 높습니다. 또한 전국의 어느 농토에서도 잘 자라고 무엇보다 병충해에 강해 친환경 유기농 재배가 가능합니다.” 한편 세계 최초로 삼채의 2차 가공에 뛰어들어든 박 대표는 ‘삼쾌삼채’라는 브랜드를 통해 삼채 분말, 삼채 진액, 삼채 환 등을 출시해 왔으며 현재도 다양한 제품 개발에 투자하고 있다. 이외에도 블루베리, 아로니아, 꾸찌뽕, 장생육년근 약도라지, 더덕, 개똥쑥 등 인체에 이로운 약초와 과실 등도 재배하여 제품화하고 있다. 그동안 농업기술센터 등에서 직접 삼채의 재배 교육을 실시해 왔던 박 대표는 삼채가 국민 약초로 거듭나는 그 날까지 전국 어디에서든 불러만 주면 달려가겠다는 강한 포부를 밝혔다.  

6차 산업으로 은퇴자들의 성공적인 노후 만들 것

박 대표는 농업도 이제는 경영이라고 설파한다. 혁신적인 농업경영과 과학적인 영농법 없이는 FTA 협약의 병폐 속에서 대한민국의 농업이 생존할 수 없다는 것이다. 이것이 그가 삼채의 국내 재배에만 만족하지 않고 가공, 유통, 판매, 교육, 홍보, 관광·체험 농원 조성, 축제기획 등에 전념하며 농업의 6차 산업화를 선도해 온 이유다. 3년 전부터 선운산약초농원을 개방하여 새로운 젊은 농업인과 귀농을 꿈꾸는 사람들에게 체험의 장을 마련해 온 것도 같은 맥락이었다. 이제 선운산약초농원은 6차 산업의 좋은 본보기로 손꼽히고 있으며 박 대표는 그동안의 공로를 인정받아 ‘신 한국인상 농업부문’의 영광을 차지하기도 했다. “6차 산업이 아니었다면 주목을 이끌어내지는 못 했을 겁니다. 그동안 농촌의 근대화는 대기업 위주로 이루어졌지만 저는 농업의 6차 산업화를 선도하며 보통 사람들도 성공할 수 있는 계기를 마련하고 싶습니다. 특히 은퇴자들이 인생의 2모작을 위해 농업에 뛰어들 때 가장 큰 힘이 실어줄 수 있는 롤모델이 될 수 있도록 더욱 노력해 나갈 것입니다.” 

한편 박 대표는 삼채의 보급을 위해 무엇보다 먹는 방법을 개발하는 것이 가장 시급하다고 보고, 삼채를 이용한 다양한 요리법 개발에도 앞장서고 있다. 그는 요리를 전공하는 대학생들과 함께 지금까지 삼채를 이용한 18종의 레시피를 개발하였고, AT센터에서 개최된 ‘국제외식산업식자재박람회’에서 출전하여 우수상을 거머쥐기도 했다. 또한 10월에 개최 될 ‘선산약초농원 삼채 축제’에서는 관광객들이 농원을 방문하여 다양한 약초를 직접 캐고, 그 자리에서 요리하여 맛 볼 수 있는 기회가 마련될 예정이다. 박 대표는 이를 통해 삼채의 우수성을 널리 알리고, 도농교류와 지역경제 활성화에도 일익을 담당한다는 방침이다. “국가로부터 39년간 녹을 먹었으니 이제는 국민들에게 보답해야할 차례라고 생각합니다. 몸에 좋은 삼채가 국민채소로 자리매김하여 국민들이 각종 질병에서 하루 빨리 벗어날 수 있도록 삼채의 재배·가공·보급을 위해 더욱 정진하겠습니다.” 그동안 농업인의 소득향상, 농촌 일자리 창출, 국민 건강증진, 식생활 개선 등에 앞장서 온 박세근 대표는 존폐위기에 처한 대한민국 농업의 희망이 되고 있다.
