수제 파이의 모든 것

과거에는 디저트 문화라고하면 영국 사람들이 오후 3~4시에 화려한 테이블 세팅으로 스콘, 케이크, 마카롱, 샌드위치 등을 즐기는 고급스러운 애프터눈티 문화를 떠올렸다. 물론 우리나라에서도 차와 다과를 함께 즐기던 문화가 있었으나 근대화의 긴 터널을 지나오는 동안 그러한 삶의 여유는 사려져버린 풍경 중 하나가 되어버렸다. 하지만 이제는 라이프스타일의 변화와 함께 일상 속에서 소소한 행복을 누리려는 사람들의 요구가 늘어나고 있고, 이를 증명하듯 발 빠르게 커피, 디저트, 브런치 문화가 유입되었다. 이제 현대인들에게 디저트는 좋은 사람들과 나누는 정겨운 대화 속에 꼭 필요한 오브제로 자리 잡고 있는 것이다. 건강한 디저트 문화를 선도하고 있는 데얼즈파이<www.therez.co.kr>의 이혜림 대표를 만나 달콤한 디저트의 세계로 빠져본다. 

우직하게 만들어내는 핸드메이드 디저트

정통 아메리칸 디저트 파이를 우리나라에 맞게 대중화하고 있는 데얼즈 파이(THERE'S PIE)의 이혜림 대표는 경영학을 전공한 후 커피전문기업 일리와 풀무원에 입사하여 마케팅과 교육을 담당해 왔다. 남달리 커피를 좋아했던 그녀는 6년 전 처음으로 ‘헬로아린’이라는 이름의 카페를 운영하였고, 1년 전 합정동으로 확장 이전하여 현재까지 ‘데얼즈 파이’를 경영하고 있다. “파이에 좀 더 집중하기 위해서 오픈하게 되었죠. 파이를 중심으로 좋은 디저트 문화를 한국에 정착시켜나가는 것이 저의 오랜 꿈입니다.” 물론 초창기에는 힘든 고비의 순간도 많았다. 열심히 파이에 대해 공부하며 다양한 클래스를 찾아 들었지만 매번 전공자와 유학자들을 따라잡을 수 없다는 한계에 부딪히곤 했다. 하지만 실력 차를 극복할 수 있는 것은 상상하는 맛이 구현될 때까지 연구의 연구를 거듭하는 것뿐이었다. 

무엇보다 이 대표에게는 먹는 것으로 장난치지 않겠다는 유별난 신념이 있었다. “정말 무식하다 싶게 100% 핸드메이드만을 고집하고 있어요. 특히 어린아이부터 어르신들까지 전 연령대가 만족할 수 있는 메뉴를 개발하고 있기 때문에 안전한 식재료 사용을 가장 중요하게  생각합니다.” 데얼즈 파이의 모든 제품들은 무색소, 무식품첨가제, 무향료, 무방부제를 원칙으로 하며, 케이크, 마카롱, 샌드위치 등의 디저트 메뉴와 음료 역시 100% 수제를 기본으로 한다. 또한 자체 홈페이지와 소셜마켓을 이용하면 누구나 쉽게 데얼즈 파이의 건강한 맛을 즐길 수 있다.    

케이터링 서비스와 딜리버리 서비스 실시

현재 데얼즈 파이는 관공서, 기업, 팬클럽 등의 소중한 행사를 더욱 특별하게 빛내줄 수 있는 케이터링 서비스를 실시하고 있다. 또한 매우 합리적인 가격의 딜리버리 서비스로 기존 매장들에 납품을 이어오고 있다. “고객의 니즈를 파악하는 것이 가장 중요하죠. 그래서 기존의 메뉴 이외에도 핑거푸드, 샌드위치, 케이크, 수제버거 등 고객들이 원하는 다양한 메뉴들을 주문 즉시 100% 핸드메이드로 제공하고 있습니다.” 한편 이 대표는 ‘데얼즈 파이’ 이외에도 빙수, 에이드, 스무디 등의 차가운(氷) 음료와 디저트를 전문으로 하는 ‘가리빙프로젝트’와 에스프레소커피와 크래프트맥주의  브루잉(Brewing)과정의 교집합을 이룬 매장을 함께 운영 중에 있다. 또한 일산에 공장을 마련하고 급식회사와 계약을 체결하여 빠르면 가을학기부터 급식으로 제품을 납품할 예정이다. “앞으로도 고객들의 몸과 마음을 모두 힐링시켜줄 메뉴를 합리적인 가격으로 제공할 수 있도록 노력하겠습니다. 무엇보다 디저트와 관련해 도움이 필요한 분들을 적극 도우며 함께 성장해 나갈 계획입니다.” 수익보다는 사람이 먼저라고 말하는 이혜림 대표, 그녀가 전하는 달콤한 진심이 일상에 찌든 현대인들의 허한 마음도 가득 채워주기를 바래본다.

In the past, desert culture often reminded us of the Englishmen’s luxurious afternoon tea culture of enjoying scone, cake, macaroon, sandwich, etc. at 3 or 4 with a splendid table setting. We also had the culture of enjoying tea coupled with dessert, naturally, but as coming along the long tunnel of modernization, such leisure of life has become one of the scenes lost. Now, however, change in lifestyle has been increasing the people’s need to enjoy small happiness in daily life, as proven by light-footed introduction of coffee, desert and brunch culture. It seems that desert has settled as an objet d’art indispensable for a friendly chat shared with nice people. We met Lee Hye-rim, president of There’s Pie (www.therez.co.kr), a leader in healthy desert culture, to learn about a luscious world of desert. 

Handmade dessert produced with simple honesty 

Lee Hye-rim, who is popularizing legitimate American dessert adjusted to our reality with There’s Pie, majored in business administration and then joined Illy, a coffee enterprise, and Pulmuone working in charge of marketing and training. She was a coffee fiend and started to operate a caf? named ‘Hello Ahrin’ six years ago, which was expanded and relocated to Hapjung-dong one year ago to manage ‘There’s Pie’ up to now. “I opened it to lay more focus on pie. It has been my long cherished dream to settle a good desert culture in Korea centering on pie.” Of course, there were many moments of difficulty in the beginning. “After working hard on pie and taking diverse classes, I would be confronted with limitations I felt I couldn’t catch up with majors and foreign educated people. However, to get over the gap in competence there was nothing to do but repeat study until I have realized the taste existing in my fancy.” 

Among others, President Lee had her extraordinary belief in not playing a joke upon things to eat. “I am adhering to handmade one hundred percent as stupid as could be. Especially since we are developing a menu that can satisfy all age groups from little child to the elderly, I regard using safe ingredients as most important.” All products of There’s Pie are without coloring matter, food additives, spices or antiseptic in principle while desert menu, such as cake, macaroon, sandwich, etc., and beverages are basically made 100% by hand. Anyone who uses the company’s homepage and social market can enjoy the healthy taste of There’s Pie easily. 

Carries out catering and delivery service 

Currently, There’s Pie is executing catering service that can make precious events of government office, enterprise, fan club, etc. even more special. The company has also been going on with delivery service on the existing shops with a range of very reasonable prices. “Understanding the customers’ needs is a top priority. So, besides the existing menu, we provide diverse menus wanted by customers, such as finger food, sandwich, cake and handmade burger, 100% handmade.” In the meantime, in addition to There’s Pie, President Lee is also managing a shop in combination of ‘Garibing project’ specializing in cold drinks, including shaved ice with syrup, ades smoothie, etc., and desert with the process of brewing espresso coffee and craft beer. Besides, she has prepared a plant in Ilsan with a plan to deliver products with feeding from this fall semester at the earliest by signing a contract with a feeding company. “I will be devoted to providing the menu that can heal the customers’ body and mind. Especially, I am planning to build up helping the persons who feel some needs in relation to desert.” President Lee Hye-rim talks of her principle of putting person before profits so we hope her sweet truth fills up the weary mind of modern people who are strung out on everyday life.
