It was the 1920s that coffee started to spread from the coffee houses appeared one by one in Myeong-dong, Chungmuro and Jongno. The trend was followed by the brewed and instant coffee formerly enjoyed by the US Army in Korea and was widely spread in the 2000s due to the explosive increase in number of coffee shops and cafes. As the market has grown significantly so did the tendency of many coffee lovers seeking more characterized or special coffee. Coffee Princess is one of good examples to answer to this demand. 

Coffee Princess uses 30 kinds of fresh coffee beans and offers unique taste and aroma through advanced roasting and blending. You can taste you own coffee that can meet your preference and mood at Coffee Princess. CEO Kim Gap-sung has studied coffee with passion for a long time and said “A bartista is not someone who has acquired coffee making technique. The one must also understand about consumers and can give a resting over coffee.”

On entering the coffee shop, you can see various coffee props Kim collected and strictly chosen fresh coffee beans you can taste if you wish. The second floor is being used for those who wish to be a bartista to learn the coffee making skills. Kim instructs the trainees “Do not brew coffee but love like you are longing for your lover and the face is overlapping on the surface of the cup you’ve just made. A good bartista is someone who is romantic and waiting for someone to come. A good cup of coffee comes from right there.” Kim also emphasizes “Running a café is not about making easy money but one must study hard about business alongside coffee and constantly make an effort.”

Coffee Princess is regarded as the best coffee house and training center in the region. It was designated as a lifelong learning center and a contract alternative training center of Chungcheongnamdo Office of Education. More than 200 trainees have gone through the door of Coffee Princess with skills in coffee making (choice/roasting/blending/tasting/extracting) as well as distribution and startup consulting. 

“There are tens of kinds of coffee in the market and the taste differs hugely depending on how to roast and by whom. So the more you learn the deeper the taste.” However, Kim puts greater emphasis on pouring one’s passion and love into each cup of coffee. “The best coffee is born in heart to heart connection between the barista and the orderer. So I’m working hard that each of my coffee can give each customer a comfort and resting.” 

When asked about future plan, Kim said “I’m preparing to launch a franchise so that more people can experience the unique taste of my coffee over the region.”
