Jinheok Jang and Yoomee Kim have a child named Ahleen. Like most moms and daddies, what to make and give to their child was one of the important daily considerations for Jang and Kim. One day, Kim noticed Ahleen liked fish but she was worried about the bones that might stick to the throat. She decided to remove all the bones of a fish, grilled the boneless fish and gave to her child who loved it so much. Then an idea popped up and she asked a help from Jang and they launched Ahleeneenae in 2018.
10 kinds of fish is sold at Ahleeneenae at the moment including mackerel, dabs, hairtail and John Dory. Removing bones are done only by hands, and then biscuit fired and delivered without adding salt or seasoning. Each portion is packed in weight of 61kg which is ideal for a child to eat per meal. Once received, you can unpack it and put it in a microwave or on a frying fan for 30 seconds to 1 minute.
[No Bad Smell]
Fish has unpleasant smell and because of this some people tend not to eat fish even if it is cooked. Noticing the issue, Jang made the most of his experience working at the fish restaurant run by his parents. And the solution was grilling the fish in a steam oven. If the ovens in general work at around 300°C, steam ovens work at around 140°C.
"A steam oven not only removes bad smell but it makes the flesh tender by keeping the oil and water at a good amount. Many moms at first doubted as the fish made by us looked not much different from the fish served on fish restaurants. But once they placed an order and tried, words spread fast without the need of marketing by ourselves" says Jang.
[No Artificial Flavors]
The fish used at Ahleeneenae is caught off the coast of Busan. The fish is frozen as soon as they were caught for freshness, sent to the capital region and Jang picks up the freshest fish possible. All the processes from removing bones by hands to grilling and packaging are thoroughly done and managed by Jang. No artificial flavors and even the salt or seasoning are added under strict control of Jang in accordance with HACCP.
"If a child start with a food sauced or seasoned, he/she is likely to start to grow in strong and stronger flavor which is not good for health. One might find it a little boring in taste due to the lack of sauce or seasoning, but it gives the original and the freshest taste possible" points out Kim.
