(PowerKorea) The Times USA designated garlic as one of the top ten health foods. In the Korean Dangun myth, the bear ate only garlic and wormwood for 100 days to be a woman. Garlic is one of the most common ingredients in the foods and has been loved by people around the world. 

Haman County, South Gyeongsang Province, is famous for garlic farming thanks to its fertile ground and moderate climate. And Baekse Help Farm is famous for its flagship brand Jinjinjin, a low temperature black garlic extract. 

White garlic becomes black garlic during the ripening process. During this process, the black garlic obtains s-allyl cysteine, a water soluble sulfur amino acid, that increases internal resorption while reducing the strong smell of garlic. The key of black garlic making process is but at making this s-allyl cysteine.

Garlic is rich in carbon hydrate, protein, fat, vitamin, iron, zinc, selenium, phosphorus and allicin. It is known to be good for immunity, blood circulation, digestion and prevention of diabetes and cancer. Black garlic in particular contains fiber, vitamin E, flavonoid, calcium and germanium. 

Kim settled in Haman County in 2016. She finished various agricultural courses run by the local government and is now taking in charge of production, processing, distribution and selling of the agricultural products she produces. Apart from Jinjinjin, she also makes and sells 100% brown rice crust and purple onion juice. Purple onion especially is rich in anthocyanin and help the body remove active oxygen.
