“Conscience and hygiene is our top priority”
CEO Kim Su-ok of Chaesunhae used to run a business in Seoul but came down to Namhae County, her home town, with her husband. “I love making food and I found great pleasure in it. One day, when still in Seoul, I happened to make garlic pickle and came to thought that using the quality Namhae garlic might be a special treat” says Kim in retrospect. She then started to make a number of food by herself such as fish sauce and the fermented alongside the garlic pickle by using the ingredients from Namhae County through which she came to develop the ‘fish soy sauce’. “I used small fishes caught offshore of Namhae County like horse mackerel and gizzard to mix with the bay salt from Yeonggwang County. Then I ripened them for 3 years to extract the crude liquid. The process goes through several times of filtering so you can feel safe to eat.” The fish soy sauce is rich in amino acid, low in salt and has not additives. Its deep and unique taste is ideal to suit all most any food alongside. The most agreeable advantage of the fish soy sauce, however, is that it has no unpleasant fish smell that makes people stay away from it. “All products of Chaesunhae are made freshly without any additives and our large bio aging barrels exposed to natural light on the 6,611 square meter space systematically produce the extracts through step by step filtering.” The garlic pickle in particular is best served cold alongside pork belly, pizza, chicken, raw fish and smoked duck and many more. Meanwhile, CEO Kim has secured an export channel to Japan and she is expecting her product to delight the appetites of the Japanese consumers. “Application areas of fermented foods are limitless and I’m determined to spread excellence of Namhae fermented foods to more people over Korea.” <Power Korea> sends a message of support.
