Innovative ‘self-fermentation and ripening method’
Located in Seolcheon-myeon, Namhae County, Egarak Black Garlic produces 70 tons of garlic a year. “We obtained a patent for our garlic fermenting method that keeps the garlic in sun tree aging barrels and fermented by heat difference and mugwort fumigation. As a black garlic specialist, we export the garlic to 10 countries including Japan and the US” says CEO Jung Yun-ho of Egarak Black Garlic. Jung used to run a building company and enjoyed a success in the field. But he turned his course to food manufacturing for he saw a bigger potential in the food industry. He made bold investment in R&D and the result was the Egarak Black Garlic from which he has developed 18 kinds of black garlic-inspired products mixed with extracts, chocolate, honey, snack and rice cake and dipping sauce. The last three categories especially are the unique products of Egarak Black Garlic and the technology and quality of the products are proven by the Namhae Garlic Research Institute, Dong-eui University and Tokyo Medical University. The black garlic removes the poignant taste and smell of raw garlic but realized the jelly-like texture and sweet and sour taste instead. Also, the ‘S-Arilsistin’ in the garlic has antioxidant properties – raw garlic does not have these properties. “Egarak Black Garlic has no additives and is made at regular temperature and humidity through self-fermentation and ripening. It keeps ‘allicin’ but removes the unpleasant smell which is good for everybody to enjoy.”

Egarak Balck Garlic recently has drawn a contract worth $450,000 with a Japanese home shopping channel. As part of this effort, we are building the second factory at the moment and are planning to open an affiliated research center in cooperation with Gyeongsang National University.
