The value of traditional liquor that has passed down through history

Our ancestors saw ‘liquor’ as food. They drank liquor as an accompaniment of the food and it also was a very important element for ancestral rituals. Korean liquor has developed through home-brewed methods. For this reason, each household has each unique taste and fragrance. Sadly, the tradition stopped when the Japanese in the colonial era announced that private households cannot make liquor. Thus appeared were ‘yakju (rice wine)’, ‘takju (raw rice wine)’ and the most popular ‘soju (distilled spirits). The prohibition continued even after the Liberation due to lack of food so the traditional liquor were disappeared into history one by one. Director Kim Geun-woong of Cheonan Traditional Liquor Research Center has studied these traditional Korean liquors for a long time. His mother Song Jum-soon was the 14th offspring of the Eunjin Song clan and he grew up watching her brewing alcohol. As a noble family, the Eunjin Song clan released a number of renowned ministers and scholars and has left a cookbook ‘Jusiksiui’ and a brewing manual ‘Wooeumjebang’. “The liquor my mother made was so popular that people from outside of the village even knew. But thanks to that, my mother had to put the jab on her head to run away when crackdowners appear” said Kim in retrospect. Luckily, Kim learned the secret of the brewing and it has been the foundation for his business today.

30 years of expertise finds the best liquor in Cheonan
The traditional Korean liquors were back into spotlight when the Asian Games in 1986 and the Summer Olympics in 1988 took place in Korea. But it was not an easy task to recover the traditional brewing methods. “People think that ‘soju’ is the national liquor of Korea and ‘takju (or makgeolli)’ as the traditional liquor. But strictly saying they both are not our traditional liquors” pointed out Kim. The latter is made from rice yeast came from Japan and the former with aspartame (artificial sweetener). Disappointed by this, Kim launched a research by getting hold of old books and records and carried it out for a considerable amount of time. Finally in 2014, he revealed ‘Dosolbiju’ and ‘Heokbulnangjaju (torch maiden liquor)’ to the world. The record of the former goes back to Wang Geon, the founder of Goryeo, that he was asked by his advisor to build a military base in Cheonan. It won the ministerial prize (top prize) from the Ministry of Agriculture, Food and Rural Affairs at ‘2016 Korea World Food Championship’. Then on 27 December the same year, he introduced 120 kinds of traditional Korean liquors including ‘‘Dosolbiju’ and ‘Heokbulnangjaju’ and also ‘Chunhongchoon (make the world prosper)’ at the Traditional Liquor Tasting’ held on the 1st floor of the City Hall. “All of those are made of ingredients such as grains, yeasts and water of Cheonan. Promoting traditional liquors is really important as it can encourage the people to have pride and the love of their hometown. So I and my staff are determined with passion and love to spread excellence of traditional Korean liquors to the world over Korea” said Kim. As part of this effort, Kim also is actively giving lectures at various organizations. It is easy to lose what we have but it is difficult to have what we’ve already lost. In this respect, the passion and effort of Kim and the staff of Cheonan Traditional Liquor Research Center is but really encouraging. <Power Korea> sends a message of support.
