The pleasure of enjoying Chicago Pizza by watching Gwangalli Beach

"Natural ingredients meet the hands of master pizza maker"

Mad Dogs Chicago Pizza, CEO Sul Sang-ryeol

Introducing one of the hottest restaurants in Busan

Located around Busan's one of the most popular tourist destinations Gwangalli Beach, Mad Dogs Chicago Pizza is famous for reviving the authentic American Chicago Pizza in Korea. You can see witty yellow and red coloured exterior and western bar-like beer tables and darts hanging on the walls when you step into the restaurant. CEO Sul used to run a hot dog store and started to introduce the unique taste of Chicago Pizza and pastas soon after. He says "Tourism and food business are flourishing in Busan. We attracted a great number of customers within 2 years of its opening. We never use frozen dough but make on receiving orders. Customers can enjoy the beautiful scenery of Gwangalli Beach or play a dart while waiting." The menus include Chicago Pizza (main), 2 kinds of Thin Pizza, Alfredo Pasta, 12 kinds of Shanghai Sea Food Pasta, and the fresh salad made with fresh local ingredients. Sul always tries to bring up new menus. 'Chili Cheese Potato' and 'Chicken Diablo', for example, are the menus you can taste only at Mad Dogs Chicago Pizza. To make his 20 year experienced chefs and their assistant chef focus on making food itself, Sul even hired a special cleaning team to carry out the cleaning job.

6 monthly new menus to captivate the taste buds of pizza lovers

To secure the best competitiveness in the dine-out industry, Sul and the chefs bring up new menus every 6 months. But they never use artificial flavoring but only fresh natural ingredients. Seohae (West Sea) sun-dried salt, for example, has no mother liquid as it removed it over a 10 year period and the chefs are directly making their unique sauces and meat broth. Sul says "I think true chefs are those who can make their own sauces and meat broth. Our chefs even buy chickens and prepare according to each part by themselves." For this reason, Sul welcomes fussy gourmets to check whether the restaurant uses artificial ingredients or not. Those who have tried both Sul's pizza and the authentic Chicago pizza in the US even said that the former was better than the latter. Currently, Sul is planning to introduce a steak menu. He says "We introduce menus every March and September. We will use a whole beef tenderloin for the steak we are introducing next month."

"Developing new menus and unique interior are the key to attract customers“

Sul has been offered a franchise business for many times but he wants to focus on managing the current restaurant. He says "Franchise means the same menu, recipe and interior as well as an unbalanced share of profits. Most great restaurants I see on TV programmes have told me that they have their own unique taste and recipe. It is more important to make unique and quality food through continuous R&D and unique interior than to make more profits. This is the reason how we have made a great success in the field." Sul continues "We pursue to be a restaurant where people of all ages and sex can have a great time. For this reason, we currently have many family customers and we will keep developing menus that can delight them." All the menus at Mad Dog Chicago Pizza is provided at resonable prices and families with children are treated with a better seat near the window. Sul concludes "Generally speaking, only 2 out of 10 restaurants are surviving. But with creative professional chefs, and unique menus and interior, you can certainly make a success in your business." Power Korea wishes Sul and Mad Dog Chicago Pizza a prosperous 2016.
