The good old spicy and deep taste of chueotang (loach in hot bean paste soup)

Agricultural corporation Nabiwon CEO Lim Yong-bum

Direct cultivation to build trust with consumers

The recipe and taste of chueotang differs from region by region. Gyeonsang Province, for example, crushes loaches, sift them out, boils them with outer leaves of cabbage and mountain herbs. Jeolla Province, on the other hand, adds bean paste, spring onions, perilla seeds and mountain herbs to create a biting taste. Meanwhile, Seoul style keeps the original shapes of loaches and boils them in a beef leg bone & intestines broth added by tofu (bean curd) and a choice of mushrooms, and Wonju style flavors the broth with chili pepper paste. However, the southern style is regarded as the best for its thick and spicy broth with abundant outer leaves of cabbage. But the recipe of the food over all is quite complicated and it is not easy to find right ingredients which made many people hesitate to launch a franchise. Nevertheless, CEO Lim Young-bum of the agricultural corporation 'Nabiwon' is creating a sensation in the food franchise market with the good old South Jeolla Province chueotang at the moment. Lim grows dried radish greens and loaches in Hampyeong County for his chueotang. Lim said "Providing safe and good food is our top priority. We directly run a 16,500 square meter farm and partner farms in Hampyeong and all the products are grown through our thorough management system." Lim has a 12 years of experience in cultivation of agricultural products and he produces the best quality dried radish greens through hygienic process. Lim also uses 80% of minor ingredients produced in the region to contribute to regional economy and job creation.

Providing authentic taste

Lim actually started to sell Nabiwon's Nabigol Chueotang through telephone order and internet. This means that it was already recognized by consumers first. Lim said "We freeze and package it as the retort type and deliver it on the cold chain system so the consumers can have its authentic taste." Encouraged by hundreds of customers' positive feedback on blogs and entering various online markets, Lim is planning to recruit partner store owners. To make chueotang, you need to put fresh ingredients in water over a day to filter wastes, boil loaches for a long time and sift them thoroughly. Then you add your choice of various other ingredients. Nabiwon meticulously carries out this process and deliver the completed frozen product to stores and customers. Everybody can easily add Nabigol Chueotang on the menu if he/she receives a simple training and you do not even need to hire profession chefs. It can be ready to service within 5 minutes and you can effectively deal with a group customers flocking in all of a sudden. Lim said "The initial capital probably is the heaviest burden for startups. But with Nabiwon, you don't need to change interior or signboard. You just add the brand 'Nabigol Chueotang' on your menu."

Delivering the true taste of chueotang to people

Lim continued "I think we gained many points for using directly grown ingredients from our customers." Lim actually started the current business to share the taste of his mother-made chueotang with more people. For this reason, he makes cueotang exactly the same way as his mother did. Lim is passionate to grow this business as a proud regional company and to suggest a model for the 6th industry. For this, Lim mentioned, the government's active and systematic support is needed. He said "It's important to find business models that can generate sustainable profits. In this respect, chueotang is a good menu to attract more customers as many people love it for its taste and healthiness." Chueotang actually is good for skin, aging and diet and is regarded as energy food. Lim suggested to startups that rather than jumping into low and short term profit-driven franchise, they had better find a competitive selling item like Nabigol Chueotang for an easy and long term profit. Power Korea wishes Lim and Nabiwon a great success in 2016.
