Creating a new trend in the food franchise industry
You might feel that you are in a cafe once you step into the head store of Lee's Gimbap in Apgujeong-dong in Seoul. The sophisticated interior and luxury shelves and the neat display of gimbap in the shop are enough to make one to feel a new trend in the food industry. The history of Lee's Gimbap started in Yeoksam-dong in Seoul in 2010, the year in which many spin-off stores of hamburger and sandwich brands poised for launching a new business. Lee remembers those times by saying "Premium foreign food were getting popular while the price of one of Korean's national snacks 'gimbap kept going down. But this actually gave me an idea to upgrade the snack to a perfect meal by using quality and differentiated ingredients. I started developing new gimbap in 2011 and eventually launched a premium gimbap store." Lee's premium gimbap created a sensation and Lee became the pioneer who set a new trend of the snack in the food market which is still ongoing. 

Since Lee moved his head store to Apgujeong-dong, he is currently running three directly managed stores and is preparing to expand the franchise business in earnest. Lee said "I received more than 70 calls a day during 2012 and 2013 but I was prudent in launching a franchise as the taste and service could possibly be changed without a proper management system." Lee now has introduced a consigned management system so that all the stores have consistency in both taste and service. 

Lee's Gimbap provides a new way of enjoying the snack
Known as the originator of premium gimbap, you can enjoy 30 types of gimbap in Lee's Gimbap including mushroom barbecued beef, spicy nuts, mushroom paprika and super vegetable. In addition, you can expect new menus as Lee is passionate in bringing up new ideas and developments. One of big advantages of Lee's Gimbap is that you do not need to wait for your gimbap to be made and served as they are already on hygienically displayed in the shelves. Also, the ingredients of gimbap is clearly visible which makes you easy to find the one you want in speed. To keep the freshness, all the gimbap is displayed only for 2 hours during summer and 4 hours in other seasons. In addition, Lee is planning to introduce a bar code that shows the time of production so that you can feel safe about the food. In terms of business, Lee said that it is a highly profitable business as the risk of failure is really low. Another advantage is that many customers are voluntarily spread the taste and service of Lee's Gimbap. This means that you have a high possibility to make a success with Lee's Gimbap if you are thinking of jumping into the food industry.
