Twist is one of the popular traditional snacks that was even sold 100 years ago. The 'Korean Doughnut' covered with abundant sugar is expected to grow like Spain's Churros. The Monnani Chapssal Kkwabaegi quelled the Namsan Central Market and is rising as the star of the traditional market nationwide. It is made of fermented 7 kinds of grain dough that is praised for its taste and flavor. Let us meet with the twist that has an impressive taste, promising sales profit and will be an ideal start-up item.

Rising as one of the Cheonan city's two specialties 
Nutty and clean taste, crispy outside gooey inside, and healthy are the words that can explain about the Monnani Chapssal Kkwabaegi which quelled the traditional market in 3 years. But the CEO Daeyoung Kim used to work as a fashion MD in a major company. Kim learned the recipe of Churros while on various business trips and applied the recipe to Korean twist. He started the business at the lest desirable corner of a market and often had an attack of frostbite on his toes. And the taste soon spread to people from mouth to mouth and the similar business started to appear. But Kim's twist was different in quality and taste because it was made of sticky rice and 7 kinds of grains to be fermented for 2 to 3 hours in a state of dough. Then it gets dressed with corn powder and fried for 4 minutes in canola oil.

But as you can enjoy this at only $50 cents, it surpassed the fame of the small walnut-flavored cake which is the most famous specialty of Cheonan city. Kim currently has 70 branches nationwide and the taste is consistent whichever branch you try. It is sold 4,000 at week day and 6,000 to 7,000 at weekend. "I've run the business for 3 years and I don't even have time to have a meal because people are lining up all the time. I now work with staff but I never lose the original recipe. As I got famous, many universities asked me to give a lecture and in 2014, I had one at Shinsegae Training Institute with the subject on passion, originality and endurance for provisional young start-ups."

Kim says that the important thing in management is marketing. "I try to provide the department store-level service. The greetings, interaction, and the cleanliness of store are as important as the ingredients and taste of the twist. This applies same to the traditional market. Our staff make doughs with mask on their mouth and cover the ingredients with acrylic panel to prevent foreign body to get into the food."

Green light on franchise, aiming to open 250 stores
"I try to deliver my skill to all the working class people in Korea to revive the national economy. I opened 70 street vender style stores last year but I want to start franchise for more systematic management of the business. I've applied of franchise standard contract to Korea Fair Trade Commission for this." Kim appeared on various TV programmes such as KBS 6 O'clock Hometown 'Finding Gourmet Restaurant' (58th), KBS Live Information Plus, SBS 'Human Documentary', and Announcer Jiae Lee's 'Biz Inside'. Kim is planning to make his company as a social enterprise.

"I'm creating an ideal work environment for staff. The opening hour in the market is from 9am to 7pm and it guarantees $4,000 to $5,000 monthly profits and you can even expect more than $10,000. Franchise store will be 33 square meter in size and the opening cost will only be around $30,000 including interior, kitchen utensils, training and membership fee, while as the vender-store style will only cost less than $15,000.

Currently, there are 1,300 traditional markets in Korea so we have enough space to wring in. You are guaranteed to make profits and I hope young start-ups will lead the activation of market economy with our twist." Kim is aiming to open 250 stores within the year and then move on to big mart and road-shop with their new menus. "I will satisfy customers eyes first through improved shape of the twist and various colors of sugar, green tea or cinnamon powder for new flavor. I want my company to be a social enterprise to carry out community services after being the top of the industry."
