국내 최초로 수제 츄러스 시스템 도입한 젊은 CEO의 좌충우돌 성공기

한 해 동안 요식업계에서 가장 핫한 먹거리로 떠오른 츄러스는 페이스트리 반죽을 기름에 튀겨내 따뜻하게 즐기는 스페인의 전통 요리로 포르투갈, 미국, 필리핀 등에서도 많은 사람들이 즐겨 먹고 있다. 스페인 사람들은 주로 츄러스를 아침 식사나 간식으로 따뜻한 초콜릿이나 우유를 넣은 커피에 찍어 먹는데, 간단하게 설탕이나 초콜릿을 뿌려서 즐기기도 한다. 최근에는 TV 프로그램 ‘꽃보다 할배’의 인기로 스페인으로 여행을 떠나는 사람들이 크게 늘어났는데, 한번쯤 스페인을 여행했던 사람이라면 현지에서 맛보았던 겉은 빠삭하고 속은 부드러운 츄러스의 달콤한 맛을 오랫동안 잊지 못할 것이다. 그래서 최근에는 국내에서도 수제 츄러스 매장들이 하나둘 생겨나 큰 사랑을 받고 있는데, 모두 정승호 대표의 뜨거운 열정이 있어 가능한 일이었다. 국내 최초로 수제 츄러스 시스템을 도입하여 먹거리 문화 다양화에 앞장서 온 정승호 대표를 만나 그 탄생비화와 향후 계획에 대해 전해 듣는다.

고객들을 향한 달콤한 진심 ‘떨어트리면 다시 오세요’

혹시 단국대 앞을 지나다가 사람들이 길게 줄을 선 매장을 본 적이 있다면, 그곳이 바로 오오츄다. 주문 즉시 깨끗한 기름에 바삭하게 튀겨내는 츄러스의 달콤한 냄새는 단박에 가던 걸음을 멈추게 하는데, 그 맛을 경험한 사람들은 너나없이 입가에 미소를 띄우며 엄지손가락을 척 올리고 만다. 이곳의 젊은 수장 정승호 대표는 집안 형편이 어려워지자 영어공부와 돈 벌이를 위해 호주로 워킹홀리데이를 떠났는데, 매일같이 사람들이 줄을 서서 먹는 수제 츄러스 가게를 보고 한국 시장에서의 가능성을 확신했다고 한다. “그 매장에서 줄을 서고 있는 고객들 중 80프로 이상이 아시아계 사람들이었는데, 생각해보니 우리나라에서도 시도된 적 없는 창업 아이템이었죠. 이거다 싶어 바로 짐을 싸서 작년 10월 한국으로 돌아왔고 곧장 츄러스 사업에 돌입하게 되었습니다.” 물론 주변 사람들은 국내에서는 이미 많은 사람들이 값싼 냉동 츄러스의 맛에 익숙해져 대중화가 힘들 것이라고 만류했지만, 정 대표는 그래서 더 수제 츄러스 시장의 가능성이 무한하다고 믿었다. 

정 대표는 젊은 패기 하나만 믿고 단돈 500만 원으로 푸드 트럭과 튀김기를 구입하여 서현역 근처에서 처음 츄러스를 선보이기 시작했다. 100만 원짜리 반죽기를 살 돈이 없어서 일일이 손으로 반죽했을 정도로 열악한 상황이었지만 오픈한지 일주 일만에 푸드 트럭 앞으로 긴 줄이 늘어서기 시작했다. 물론 창업 과정에서 의기투합했던 사람들과 각자 다른 노선을 따르기로 하면서 겪었던 심적 갈등도 있었고, 경험 부족으로 가스가 누출되어 화재가 나고 가스 중독으로 길바닥에 쓰러지는 끔찍한 사건이 벌어지기도 했다. 또 기대에 부풀어 서현역 주변에 매장을 알아보다 터무니없이 비싼 임대료에 좌절을 맛보기도 했다. 하지만 다시 한 번 계란으로 바위 치는 심정으로 서울 건대에 진출해 이번엔 노점 장자를 시작했고 다시 단국대로 옮겨 장사를 이어갔다. 그렇게 차곡차곡 모은 곳으로 올해 2월에는 단국대 앞에 꿈에 그리던 매장을 오픈할 수 있었고, 오오츄 앞에서 줄을 서 있는 사람들의 모습은 단국대 앞의 익숙한 풍경이 되었다. “일요일에는 아직도 푸드 트럭을 이끌고 서현역으로 출근을 하고 있어요. 초창기 오오츄의 성장을 도와주신 단골들이 안 오면 전화가 오기도 하는데, 고마운 분들에게 조금이라도 보답이 될 수 있다면 좋겠습니다.”

로열티 없앤 프랜차이즈 사업으로 청년들의 소규모 창업 도울 것

초창기 사업이 잘되자 한 달 동안 40명의 사람들이 가맹점을 내달라고 졸랐고 현재도 매달 100명 이상이 가맹점 사업을 문의해 온다. 하지만 가맹점을 내주는 방법도 몰랐고, 과연 그들이 오오츄의 맛과 서비스 정신을 제대로 교육받을 수 있을까 확신이 서지 않아 모두 거절했다. 프랜차이즈 업체와 컨설팅 회사에서도 오오츄의 사업 확대를 제안하기도 했지만 어쩐지 석연치 않았다. “대부분의 사람들이 소규모 창업을 하겠다면서 상권이 좋은 곳에 근사한 인테리어로 사업을 시작하고 싶어 했는데, 그건 모순이라고 생각됐죠. 소규모 창업은 투자비용이 적은 대신 포기해야할 것들이 많은데, 정작 중요한 건 사람들을 끌어들일 수 있는 참신한 아이템과 맨바닥에서도 성공을 이룰 수 있는 열정이니까요.”

본격적으로 프랜차이즈 사업에 돌입한 정 대표는 은퇴자금으로 창업을 꿈꾸는 사람들보다 청년들의 소규모 창업을 돕겠다는 의지다. 평소 기업들이 어려운 소상공인들에게 비싼 로열티를 챙겨 본사의 이익을 극대화하는 것에 의구심이 들었다는 그는 큰 광고를 못 해주는 대신 로열티를 받지 않겠다는 파격적인 제안을 한다. “가맹점들이 제대로 된 오오츄의 맛을 낼 수 있도록 저와 다른 직원 한 명이 직접 교육을 담당하고 있지만 정말 배웠으면 하는 것은 고객들에게 즐거움을 전파하려는 저희에 마인드죠. 젊다면 지금 당장 시작하세요. 가진 것이 없으니 잃을 것도 없고, 아는 것이 없으니 밑바닥부터 시작하면 되니까요.” 오늘도 단국대 앞에는 ‘떨어트리면 다시 오세요’라는 유쾌한 외침이 울려 퍼진다. 어쩌다 바쁜 학생들이 오래 줄을 서서 츄러스를 받아 들고서는 가는 길에 떨어트리는 걸 보면 마음이 안 좋았다 말하는 정승호 대표, 젊은 CEO가 단 시간에 이룬 성과는 어쩜 고객들을 향한 그의 달콤한 진심에서 비결을 찾을 수 있지 않을까? 불안한 경기와 계속되는 취업난 속에서 절망하고 있는 이 땅의 청년들에게 그의 좌충우돌 성공기가 달콤한 격려이자 희망의 빛이 되기를 바래본다.

Young CEO's introducing Korea's first hand made Churros 

Churros is a traditional Spanish food and has been enormously popular in S. Korea this year. It is a fried pastry dough which is widely enjoyed by many people in Portugal, US, and the Philippines. Spanish usually enjoys it for breakfast or snack with coffee or after sprinkling some sugar or chocolate on it. Recently, due to the popularity of a TV drama 'Better old men than flower', a lot of people left for Spain to travel and once they taste the churros they cannot forget its crispiness outside and the softness inside. As a result, many churros stores opened up in S. Korea. Korea's top bilingual magazine Power Korea has met Seungho Geong who introduced Korea's first hand made churros and heard about its birth and future plan.

The sweet kindness for customers "come to get a new one if you dropped it"

If you saw a lot of people queuing up while you were passing by Dankook University, the store undoubtedly is 55chu. Its sweet smell stops the people walking nearby and its taste make them hold up their thumb. The store owner Geong found the churros's possibility of success in the Korean market when he went to Australia with a working holiday visa and saw people lining up to eat churros. He said "80% of people lining up were Asians and I found it a great start-up item. I thought this is it and flew back to Korea in October last year to start the business." People around him said that frozen churros was already familiar to the Korean people so it was difficult to popularize the item. Nevertheless, Geong believed the possibility was limitless.

With his ambition, Geong bought a truck and a fryer at $5,000 and started the business around Seohyeon subway station. He made the dough with his hand as he could not afford another $1,000 for a dough machine. But his hard work was soon compensated by the long queue in a week's time. He once had argued with his business partners and fainted on the floor due to the lack of experience on treating the gas and discouraged by high rent. But he never gave up and opened a stall around Konkuk University and then moved to Dankook University. After saving a certain amount of money he could finally open his dream store in front of Dankook University and people queuing up to his store has now become a common scene in the area. Geong said "I still drive to Seohyeon subway station every Sunday because the customers who tasted my churros in the areas sometimes call me to come to the area to give them the taste. I thank them very much."

Franchise without any royalty for young start-ups

About 40 people called every month to talk about franchise in the initial period of the business but now he gets more than 100 calls. But Geong did not know how to franchise and had a doubt whether they can learn the 55chu's true taste and service so he dismissed all inquiries. Also the franchise companies and consulting firms suggested the expansion of 55chu but he was not quite sure. He said "most people started their small business with a glamorous interior in a great place but I thought the idea was wrong. Small business requires little capital but they have to give up many things instead. A unique business item and the passion to succeed are the mainly factors."

Now the franchise is on, Geong wants to help young start-ups rather than retirees who have severance pay. He always doubted when bigger companies exploit small business men by high royalty. So he decided not to take any royalty instead of advertisement which he cannot provide like big companies. He said "I and one of my staff are training the people but we really hope that they learn our service mind. If you are young, start right now. As you don't have any, there's nothing to lose either. You know nothing much, that's why you can start from the beginning." His catch phrase "come to get a new one if you dropped it" is being resonated around Dankook University as always. Geong said that he feld really sorry when he saw people drop the churros they have just bought. We might find the clue to his success by this kind heart.
