사포닌을 최대로 보존시켜 만든 흑홍삼 분말추출액

서민영 대표는 일반 CEO가 아니라 약국에 근무하는 약사다. 그가 홍삼에 관심을 가지게 된 것은 우리나라의 대표 건강식품인 홍삼이 제대로 된 가치의 제품을 만들어내고 있는지에 대한 의문이 그 출발점이었다. 

"처음에는 집에서 알려진 전통방식 대로 수삼을 쪄서 홍삼을 만들어 먹었습니다. 그런데 수삼을 찌는 과정에서 노란 사포닌 진액이 밑으로 흘러 내리는 겁니다. 홍삼을 만드는 백작소에도 알아보니 그 진액을 별도로 모아 홍삼농축액 만드는데 재활용 한다 그러던군요. 어이가 없으면서 한편으론 그럼 현재 시중 판매하는 홍삼뿌리는 완벽하지 않은 반쪽홍삼이라는 결론이 서더군요"

서 대표가 자랑하는 ‘착한 흑홍삼’의 제조비법은 수삼을 먼저 건조시킨 후 건삼으로 찌는 방식이다. 전통 방식의 홍삼 제조는 수삼을 찌고 난 후 건조하는 반대의 방식으로 만들어지는데, 이 경우 수삼을 찌는 과정에서 수분이탈 현상으로 인삼진액이 많이 빠져나가게 된다는 것이다. 이런 과정을 거치면서 핵심 성분인 사포닌이 소실되고 효능이 감소한다. 제조 과정에서 사포닌 등 영양 성분의 소실을 최대한 막아내기 때문에 검붉은 빛의 흑홍삼이 나온다. 또 기존 홍삼처럼 뿌리 채 물에 녹는 수용성 사포닌만 추출하고 남은 찌꺼기(홍삼박)을 버리거나 재활용하지 않고, 흑홍삼 뿌리를 통째로 미세하게 갈아 담아 사포닌 외에 그 동안 버려졌던 비사포닌계 영양소까지 자연 구성비 그대로 먹을 수 있어 체내 흡수?이용율을 극대화 시켰다.

6년근, 1등급 건삼을 사용하고 유통 마진 줄여 공급

‘착한 흑홍삼’은 최상급의 재료를 사용하고 있다. 국내에서는 최초로 공인인증기관에서 품질을 보증하는 6년근 1등급 건삼을 사용해 재료에 대한 불신을 줄였다. 믿을 수 있는 양질의 제품을 사용하고자 했기 때문에 원가 비중이 시판되는 타 제품들보다 두 배 이상 높고, 진세노사이드도 1포당 12mg 고함량으로 왠만한 홍삼농축액보다 사포닌 함량이 높지만, 서 대표는 중간유통과정을 줄여 30포에 8만원이 안 되는 가격으로 제품을 공급하고 있다.

‘착한 흑홍삼’은 시판한 지 3~4개월 정도 지난 신제품이다. 처음에는 일산 대화동에서 공장을 작게 시작해 물량을 공급하고 있었지만 입소문을 타고 좋은 제품을 이리저리 찾는 손길이 많아져 최근 백석동에 제2공장을 세우고 본격적으로 마케팅에 시동을 걸며 규모를 확장할 예정이라고 한다. 서 대표의 새로운 방식으로 만들어낸 ‘착한 흑홍삼’은 곧 그 효능을 인정받고, 침체되어 있는 건강식품 업계에 새로운 바람을 불러일으킬 수 있을 것이다.

'Heukhongsam (good black red ginseng)', the best quality ingredients that reduced the nutritional loss of saponin

As cities become more industrialized various diseases are distressing people and healthy food industry is booming as a result. Among those healthy products, red ginseng is becoming a trend. Because red ginseng is rich in saponin which is a useful ingredient for our body it keeps its number one status in the field. It contains Rg1, Rb1 and Rg3 saponin. Rg1 saponin is good for blood clot, fatigue and immunity, Rb1 for calming effect and anti-diabetic effect, and Rg3 for improving hyperlipidemia and preventing transfer of cancer cell according to a research. Black red ginseng powder extract liquid made of preserved saponin 

In fact, Seo is not a CEO but a pharmacist who works in a pharmacy. He started to have an interest in red ginseng when he was in doubt if they were made with its proper value. Seo said "I steamed fresh ginseng to eat red ginseng which was the traditional method. But the yellow saponin sap was oozing out during the steaming process. I asked the related industry and they said they reuse the sap to make red ginseng extract liquid. I was shocked because that meant that they were not selling proper ginseng."

Seo then tried for a new method by drying fresh ginseng first and steaming it later to keep the sap(saponin) from oozing out. The color of red ginseng turns into black during this process. This is why it is called 'good black red ginseng'. The traditional process is the other way round which loses a lot of sap (saponin) and reduces its effect. Seo maximized its absorption rate by extracting only the water-soluble saponin and grinding the root of black red ginseng minutely so that it can keep even non-saponin nutritions.

Using 6 year old first grade red ginseng, reducing distribution margin

'Good black red ginseng uses the best quality ingredients: 6 year old first grade dried ginseng whose quality is guaranteed by certification authority for the first in Korea. Because of the best quality ingredients, the production cost is double the existing products and ginsenoside is 12mg per one sachet which means the amount of saponin is very high. But Seo reduced the distribution margin instead and is supplying the product at $80 for 30 sachets. Good black red ginseng has been on sale for 3 to 4 months. It was initially produced in the factory in Daehwa-dong, Ilsanseo-gu but Seo will plan to open a second factory in Baekseok-dong to meet the high demands. The effect of 'Heukhongsam (good black red ginseng)' will be recognized and will bring a new sensation to the health food industry.
