European takeout cafe competes by 'healthy category branding'

The moto of the CEO So is 'health and happiness'. So used to be a salesman in a foreign medical company but dreamed to run a global franchise and eventually quit his job in February 2013 to travel Europe while studying related field for 6 months at the same time. So was impressed by Cathedral culture and its calm interior. He tried 9 times to find suitable franchise and after 7 times of upgrading he created a concept of 'category branding'. He first tried well-being oriental medicine teas but the market required more comsumer-oriented approach, and moved on to juice and black tea. He then started to get popularity with mulled wine inspired while travelling in Prague. So said "mulled wine was a 2 year ahead trial at that time. I strongly believe it produces a deep French level taste. But churros, which I served as a treat, gained more popularity and it eventually became the main product and thus opened a European takeout cafe." The Street Churros team is divided into interior, design, marketing and distribution. They have a lot of data on drinks and related fields thanks to their various research. Compared to normal multiplex or Mexican style churros, they succeeded localizing Barcelona style churros, which dips in sauces and ice cream, in Korea. The main menu, the horse hoof's shape 50cm churros means a 'luck' in Spain. It is made of Spanish style paste with crispy outside and chewy inside including 15 Korean grains such as oats, wheat corn, sorghum, brown rice, and glutinous rice. Churros is good when consumed with high quality dipping sauce or with mulled wine. So emphasized "our menus are cheap but not the quality. We only use the best quality products through a guaranteed process. Mulled wine is difficult to make but we simplified the process to make it in the store, and despite it is a takeout, we also gave a lot of efforts for the interior of stores look like a wine bar." Thus the 50cm churros costs only 2,000 won ($1.8) and mulled wine only 5,000 won. The secret of Street Churros is to avoid making it based on the production cost. In other words, make it first with the best ingredients and then find a way to reduce the unit price. Through this process, So could be able to find new menus which will lead the market for the next 3 to 5 years.

Street Churros plans to open 333 branches nationwide including the one on Gyeongridan road in Itaewon, Seoul, the branch which people queue up to have one or two. And 1/3 of 333 branches opening up in the nation's A class hot spots is So's goal. But ultimately, So wish to enter the US and Chinese markets to show a true taste of Korean style European Churros. Curretnly, So is proceeding the franchise business with buyers in New York, LA, Arizona as well as in China and Taiwan. So said that the detailed direction of expansion plan will be settled by the end of next year. In order to do that, So focuses on the fast changing environment of Korean snack culture and localizing the menus which will be difficult to copy without a know-how. Currently, So is planning to set the menu for this winter and releasing fondue style products which will warm and sweeten up this winter. And So's pursuing for the balance between nutrition and trend will keep going.
