세계자연유산 제주 ‘거문오름’의 검은 땅에서 캐낸 검은 진주, 블랙 푸드!

제주도 한라산의 기생화산 중 하나인 ‘거문오름’은 그 지질학적 가치를 인정받아 2007년 유네스코 세계자연유산에 등재됐다. ‘거문오름’이 위치한 제주시 조천읍 선흘2리는 거문오름의 신령스러운 기운을 지닌 검은 땅에 검은 농산물들을 넉넉히 품고 있다. 거문오름을 오르며 그 땅에서 거둔 음식을 먹으며 마음을 치유하는 동시에 몸을 보양하는 여행길을 떠나 보자. 그곳에서 거문오름 블랙푸드 육성사업단 김상수 단장이 우리를 맞이한다.
청정 제주가 기른 흑색 농산물과 거문오름의 융합
거문오름 블랙푸드 육성사업단 김상수 단장은 유네스코가 인정한 세계자연유산 ‘거문오름’의 장소적 가치와 청정 제주의 맑은 물과 공기가 길러낸 흑색 농산물을 결합하여 지역경제를 활성화 하는 데 큰 힘을 발휘했다.
김 단장은 ‘블랙푸드’로 제주도기술원의 지원을 받아 2010년 첫 사업을 시작했다. 그는 검은 농산물을 재배하는 농민들에게 검은콩, 검은깨 등의 종자를 지원하고 마을 식당에는 ‘블랙푸드’ 메뉴를 추가하도록 유도했다. 1년 동안 시범 운영을 한 후, 블랙푸드 사업단이 발족됐고 준비 기간을 거쳐 2013년 ‘거문오름 블랙푸드 육성사업단’이 출범했다.
거문오름 블랙푸드 육성사업단은 거문오름이 있는 제주시 조천읍 선흘2리에 자리잡았으며, 거문오름이 지닌 검은 땅의 신령스러운 기운에 검은 농산물이 품은 건강과 장수의 의미를 한 그릇에 담는 역할을 하고 있다. 또한, 제주시 전체의 풍부한 자연생태와 관광자원을 프로그램화하여 연계 활용하도록 하는 등, 새로운 관광객의 행태변화에 능동적으로 대처할 수 있도록 테마 관광 상품 개발에 앞장서고 있다.
이에 블랙푸드육성사업단 김상수 단장은 지역발전과 경제활성화에 이바지한 공을 인정받아 ‘2014 대한민국 신지식경영 대상’을 수상했다.
명품 오메기떡 우리 농산물 레시피
제주가 낳은 블랙푸드는 흑돼지, 검은콩, 검은깨, 검은쌀로 만든 검은 떡 등 여러 가지이지만, 현재 거문오름 블랙푸드 육성사업단의 주력상품은 명품 오메기떡이다. 명품 오메기떡은 순수 우리 농산물만을 사용한 레시피 개발을 마쳤고, 2015년 3월 가공공장이 완공되면 직접 생산·판매를 시작할 계획이다. 또한 향토산업육성산업을 이끌 수 있는 떡 관련 전문가 양성을 위해 ‘퓨전떡 전문가 양성과정’ 체험프로그램을 운영하고 ‘즉석 육가공 전문가 과정’ 프로그램도 2014년 9월부터 시행 중이다. 김 단장을 필두로 한 거문오름 블랙푸드 육성사업단은 오메기떡의 그 명품 레시피만이 만들 수 있는 명품 맛을 알리기 위해 다양한 곳에서 홍보 활동에 박차를 가하고 있다. 2014대한민국 향토제품대전에 참가, 경기도 고양시 킨텍스 전시장에서 오메기떡과 구름떡을 선보였으며, 2014 한국농업경영인전국대회에서도 오메기떡 홍보를 위한 무료 시식을 실시했다. 또한 2008년 7월 처음 개최한 ‘거문오름 국제트래킹대회’는 올해까지 8회째 진행됐으며 김 단장은 개막식을 통해 오메기떡 홍보를 톡톡히 해냈다. 국제트래킹 대회에는 매년 1만8000~2만 여 명이 방문하고 있다. 김 단장은 국내외 어느 곳이든 누구를 만나든 맘속에 지닌 강한 포부를 자신 있게 말한다.
“제주 공항에서 30여 분 거리인 거문오름은 한라산, 만장굴, 성산일출봉 등의 중심에 위치한 관광특구입니다. 거문오름 블랙푸드 육성사업단은 이러한 자연과 음식, 문화를 융합시켜 제대로 된 상품을 만들고 소비자들로부터 인정받을 수 있는 사업단이 되겠습니다. 또한 지역경제활성화뿐만아니라 건강한 먹거리의 품위를 한 차원 높여 나가는 일에 최선을 다해 세계로 나가는 거문오름 블랙푸드 육성사업을 펼쳐 나가겠습니다”
신이 내린 검은 땅과 그 땅의 블랙푸드
‘BC(Black-color) 농업’은 검은색을 띤 농작물 또는 검은색 열매가 열리는 농작물을 재배하는 농업이다. 나아가 그러한 농산물을 활용한 블랙푸드(Black-Color Food)를 제조하는 부문까지 포함한다. 검은색 식품은 항산화력으로 노화를 막는 안토시아닌 성분이 다량 함유돼 있고 혈액순환을 도와 몸을 따뜻하게 하고, 몸 속 노폐물을 제거하며, 항암효과와 성인병 예방, 다이어트 등에 좋다는 연구결과가 속속 발표되면서 관심이 집중되고 있다.
블랙푸드는 검은콩, 검은깨, 검은쌀 등과 같이 검은색을 띤 자연식품으로 만든 음식을 의미하는데, 가장 먼저 떠올릴 수 있는 ‘검은콩 두부’나 ‘오징어먹물스파게티’, 최근 판매량이 급증하는 ‘검은콩이나 검은깨가 들어있는 우유’ 등이 좋은 예이다.
검은색 식품은 자연에서 얻은 검은 빛을 띤 식품으로 검은콩과 검은깨, 검은쌀(흑미), 흑돼지, 흑염소, 오골계, 흑설탕, 오징어먹물, 수박씨, 석이·목이·표고 등의 버섯, 건포도, 블루베리 등이 대표적이다. 또한 자연에서 얻은 검은 빛이 아니더라도 발효시켜서 검게 된 된장이나 볶아서 검게 된 것 또한 검은 식품으로 보고 있다.

Gumoonorum(a volcanic cone) is one of the parasite volcanos in Jeju Island and is designated as a UNESCO World Natural Heritage in 2007 for its geological value. 2 Sunheul-ri, Jochun town, Jeju city, where Gumoonorum is located, embraces a mystical aura of Gumoonorum as well as abundant black agricultural products on the black soil. Let us go on a trip to the volcanic cone and walk up the hill while we are eating the food from the soil to vitalize our body and to heal our mind. Then Sangsu Kim, the head of Gumoonorum Black Food Fostering Agency, will greet us.

Kim exerted a considerable effort to activate the regional economy by combining agricultural products, which are grown up by Jeju's clean air and water, and the volcanic cone.
Kim started his 'black food business', supported by Jeju Province Technology Institute, in 2010. He supported black beans and black sesame seeds for the farmers and encouraged the restaurants to add black food on their menu. After running a test-operation for 1 year, the black food fostering agency was launched, and after a certain preparation period, Gumoonorum Black Food Fostering Agency was finally established in 2013.
The agency is located in 2 Sunheul-ri, Jochun town, Jeju city and plays the role to put the black earth's mystic aura and the health and longevity of black food into one bowl. The agency is also leading the development of tourist products by programming the Jeju city's abundant natural ecology and tourism resources. For his contribution to the regional development and economic stimulation, Kim was awarded from 2014 Korea New Knowledge Management Awards.

Though there are many kinds of black food from Jeju such as black pigs, beans, sesame and rice cake but Omegi-tteok(rice cake) is their signature product. They have finished developing its recipe by only using the Korean agricultural products and it will be on sale when the processing plant is completed in March 2015. And for this, they are currently running a 'Fusion Rice Cake Specialist Training Course' and 'Instant Meat Processing Specialist Course' for those who can promote local business. In order to spread the rice cake's delicious taste, they are spurring their horses in various fields. They introduced Omegi-tteok and Gureum(cloud)-tteok in 2014 Korea Rural Show at Kintex in Goyang city, Gyeonggi province, and offered a free sampling at 2014 Korean Advanced Farmers Show. Also, 'Gumoonorum International Tracking Contest' has been running for 8 years since it first started in July 2008, and Kim represented Omegi-tteok excellently at the opening ceremony this year. The contest is being participated by 18,000 to 20,000 people yearly. Kim tells his ambition confidently whenever and wherever he meets people "it takes 30 minutes from Jeju International Airport to Gumoonorum and it is a special tourist district surrounded by Halla Mountain, Manjang Cave, and Sungsan Volcanic Cone. Gumoonorum Black Food Fostering Agency will combine the nature with its food and culture to produce quality products and we will be a trusted agency. We will also do our best to activate regional economy and to promote healthy food."

BC(Black-color) Agriculture is an agriculture which cultivates black agricultural products with which makes black-color food by using the products. Black food contains abundant anthocyanin which prevents aging by its antioxidative activity. It helps blood circulation to keep the body warm, and remove body wastes, and prevents cancer and adult diseases, and good for diet according to various research. Black bean curd, squid ink spaghetti, and black bean & sesame milk are some of the good examples of black food. The natural black food includes black sesame, rice, pigs, goat, silky chicken, squid ink, watermelon seed, seogi/moki/shiitake mushrooms, raisin and blueberry. Fermented black food such as black soy bean paste or black food produced by frying are also regarded as black food.
