유기농 재료로 프리미엄 디저트 시장을 활짝 열다

지금은 그야말로 디저트 시장의 춘추전국시대다. 지속적인 경기침체에도 불구하고 올해 5월까지 커피 수입규모는 5만400톤으로 전년 4만9000톤 대비 10% 늘어났고, 더불어 디저트 시장도 매년 높은 성장세를 기록하고 있다. 최근에는 앞다투어 국산 팥으로 단팥죽과 팥빙수를 취급하는 업체들이 생겨났고, 여름철을 맞아 버블티와 망고빙수, 질소아이스크림, 마카롱아이스크림 등의 이색 디저트의 출현도 크게 늘어난 추세다. 하지만 향후 디저트 시장은 프리미엄 디저트 시장으로 새로운 국면을 맞이할 것으로 보인다. 엄선된 유기농 재료로 디저트 시장의 새로운 패러다임을 제시하고 있는 백설의설화공주(이하 백설공주)의 이성화 대표를 만나 건강한 디저트의 세계로 빠져본다.

백설공주는 최정상급의 실력을 가진 파티쉐들이 포진하여 유기농 재료를 바탕으로 핸드메이드 디저트를 만들고 있어 기존의 카페에서 맛볼 수 있는 디저트들과의 비교를 거부한다. 하지만 이곳이 연일 문전성시를 이룰 수 있었던 가장 큰 이유는 그러한 최상급의 디저트를 누구나 부담 없이 즐길 수 있게 하는 합리적인 가격에 있다. “디저트는 인류의 시작과 함께 했다고 해도 과언이 아닌데 과거의 디저트들은 오직 부유층만이 향유할 수 있었죠. 물론 지금은 디저트가 많이 대중화되긴 했지만, 사실 고급 디저트에 대한 가격이 너무 높게 책정되어 있어 합리적인 가격을 제시하는 것이 중요하다고 생각했습니다.”

차별화된 메뉴 역시 눈여겨볼 만하다. 한국적 디저트를 기본 메뉴로 세계적인 디저트 메뉴를 개발하고자 했던 이 대표는 우리 고유의 먹거리를 새롭게 해석한 인절미설화, 밀크팥설화, 오곡설화 등의 빙수류와 고구마 만주와 파이, 인절미토스트 등을 차례로 선보였다. 또한 미국의 뷰티애플과 프랑스의 마카롱과 조각케익, 영국의 컵케익과 쿠키, 일본의 토케루 도지마롤을 비롯한 타르트, 푸딩, 젤리, 파르페 등의 다양한 디저트의 개발과 함께 동서양의 다양한 차와 커피메뉴를 알차게 구성하는 한편 프리미엄 디저트를 표방하고 있는 만큼 모든 지점에서 식재료에 대한 철저한 관리와 꼼꼼한 위생 점검에도 만전을 기울이고 있다. “여름 무더위 때문인지 프리미엄 몬스터 아이스크림과 오레오 빙수가 큰 사랑을 받고 있어요. 특히 빙수를 찾는 사람들이 크게 늘어 한번 맛을 보기 위해서는 수십여 분을 기다려야 하는데도 찾아주시는 분들이 많아 송구하면서도 감사한 나날을 보내고 있습니다.”

  As the interest in healthy food items has increased a lot, a variety of healthy foods  are favored by many people. But it also concerns about health, this is the very diabolic dessert which everybody finds and loves, shutting his or her eyes tight. Being opened for the first time in April in Daegu Dongseongno (www.백설공주.kr), with which CEO Lee Seonghwa declared the beginning of a premium dessert cafe who had struggled for many years healthy dessert culture. "I wanted to change the bias that dessert is not healthy by using organic ingredients. In addition, development of a variety of products, I have been trying to introduce more variety of dessert to people." In the Snow White, there are best pastry chefs, who have made handmade desserts based on organic ingredients and reject the comparison of desserts by a traditional cafes. The biggest reason why the store always has a mass of customers is that customers feel free to be able to enjoy first-class desserts at reasonable prices. "It's not an exaggeration to say that the dessert had started with the  beginning of the human race, but only the wealthy in the past could enjoy desserts." 

Of course, there is a lot of popularity of desserts, In fact, prices for high-quality dessert are too high and the reasonable price, I thought, is important to present." The differentiated menu is worth notice. CEO Lee who tried to develop the worldwide dessert menu then introduced with a new interpretation of our own food, injeolmi, Korean traditional rice cake made from the glutinous rice and coated with bean flour Seolhwa, Red Bean Milk seolhwa, five grains seolhwa etc ice flakes with syrup, sweet potato Manjoo and pie, injeolmi toast etc. Including beauty apple of the U.S. and  French macaroons and a piece of cake, Britain's cupcakes and cookies, Japan's Tokeru Dojima Roll, and Tarts, pudding, jelly parfait desserts, etc with the development of a variety of desserts and a variety of tea and coffee menu of East and West, while as advocating the premium dessert ingredients, management at all the stores, a thorough management of food ingredient and scrupulous hygiene inspection, all of which we are paying attention to. "Probably because of the summer heat Monster premium ice cream and Oreo is getting big love.   It has been three months since the Snow White's head office opened. The Snow White is now a hot place, not only in Daegu Dongseongno but also in Nation's most beloved dessert cafe so it is expanding its presence. More than 20 stores already opened in Gwangju, Daejeon, Ulsan, Busan, Jeju, including Seoul the stores are being in sales revenues greatly.
