Dining industry which has laid the foundation for the progress of Korea¡¯s food industry is not expected to escape from slump for the time being as the supply and the operation cost are continuously rising. In particular, Japanese cuisine and sea food restaurants are acutely suffering from deep stagnation. From a business index of the 4th quarter, Japanese restaurants were down from 70.13 in the 3rd quarter to 69.49 in the 4th quarter and seafood restaurants were from 68.78 to 69.66 in the same period. As Korea¡¯s only sashimi take-out shop, Hello Fish is drawing attention based on coffee-shop like cozy interior and hygienic environment. 

¡°As people are more interested in well-being, needs of pursuing healthy food is increasingly growing among customers. ¡°If you want to run a franchising business, you should run it by yourself for at least 1 year. Without it, you are not eligible to run a franchising business. By running Hello Fish, we made some achievements. We have a low risk from a low fixed cost. That makes it easy to run our business. Even after Fukusima nuclear disaster, sales increased by more than 25%.¡± said he. 

He added that he would engage with the franchising of business from this year.

To provide safe and clean fresh fish, it adopted ultraviolet system in storage to maintain the high quality level of water. Even the cutting board is made up of sun tree, known to have anti-bacterial effect. We try to ensure hygiene and cleanness. Our appetite is sensitive. But, in terms of sashimi, consumers can enjoy the same taste even at different restaurants because it does not require special cooking.¡± he said. Flatfish, rockfish, sea bream and sea bass are their main product and provide seasonal menu of sea cucumber, sea squirt and gaebul. Optimized Item for Little Capital
