(PowerKorea) Buckwheat is rich in protein and fiber and is known to be good for heart and helps prevent diabetes, high blood pressure and indigestion. The seed of buckwheat is rich in rutin, tannin, categin, amino acid, vitamins and minerals. 

Most buckwheat noodles in South Korea are produced overseas and they are sweet buckwheat. Sour buckwheat aka black buckwheat on the other hand is home-soil friendly and has 74 times more rutin. Rutin is known to make blood vessel strong and help our body slow aging and cell damage. Also rich in sour buckwheat is flavonoids which help liver function. 

Jeong Yang-il, CEO of Uiryeong Golden Buckwheat, was running a restaurant when he heard doctor Yoon Young-ho of the Rural Development Administration developed sour buckwheat that has 74 times more rutin than normal buckwheat. He made a way to meet him and came back home with helpful information. He then moved to his hometown in 2012 and started eco-friendly farming with buckwheat. 

He now is selling and supplying various sour buckwheat product lines in noodle, powder and source through his own shopping mall alongside regional shopping malls and e-commerce giants Naver, Coupang and Wemakeprice. 

“The cutting edge equipment in my smart factory separates foreign bodies and packs the products with vacuum packaging. When an automated noodle pulling out machine is installed by the end of the year I expect more consumers can enjoy my healthy sour buckwheat products” says Jeong.

Meanwhile, Jeong is working on adding more product lines including sour buckwheat soy bean paste, rice crust, pork cutlet and sweet and sour pork in the coming years.
