‘Tonkatsu’ reminds many Koreans of olden times where ‘gyeongyangsik (a special light la carte)’ restaurants offer special tonkatsu menus for special occasion. Apart from these principles, the rational price of each dish also cannot be missed to mention when talking about the success Brown Tonakatsu is enjoying today. Also, the taste of each dish is the same whichever restaurant you visit nationwide as well as the interior. It is Shim’s slogan that “Success of franchisees is success of Brown Tonkatsu!” Shim points out that the sauce and bread crumbs decide the taste of tonkatsu on which the consistency of the taste is secured in all restaurants. In addition, the head office dispatches management supervisors to all affiliates to check on the current status of the business and to bring up effective solutions when found any drawbacks. And the supervising covers many areas from management and tax to menus and customer services. With this effective management system as the springboard, Brown Tonkatsu has recently paved a way to the U.S. market and is ambitiously preparing for the Canadian market starting in Ontario. For this, CEO Shim diversified the menus to carbonara and whole squid fry in addition to a number of eye popping tonkatsu menus mixed with honey butter and pizza.
