Opened in Ilsan in 2016, Jejuhayoungbonga is best known for Jeju silver hairtail and mackerel. CEO Shin Hyun-chul developed his own hard-boiled whole hairtail and grilled hairtail and a number of mackerel dishes. Shin points out some of the menus that have made Jejuhayoungbonga as famous as today: hard-boild hairtail, raw mackerel (whey), Jeju sea urchin eggs and Wando seeweed soup. The restaurant is 330 square meter in size and can accommodate 150 dinners at once. You and your three companions can fill the stomach with a meal designed for four at about 89 USD. To keep the freshness of Jeju silver hairtail, the fish gets cooled as soon as it is caught and directly delivered to the restaurant by air. Hairtail is known to be rich in protein and good for eyes and bones and adult diseases. But Shin’s expertise is well shined when it comes to delivering the authentic Jeju hairtail taste to the dinners of his restaurant since the fish is one of the most popular local specialties of Jeju Island. In terms of raw mackerel, Shin invented a method to keep alive as near as possible right before serving it as raw fish; the thin slices of the fish is best eaten by wrapping it with seasoned laver as in Jeju. Shin used to work as a producer of a broadcasting corporation. He fell in love with hairtail during his business trip to Jeju and started to learn the skill at a restaurant in Jeju. The name ‘hayoung’ in his restaurant name means ‘many’ in Jeju dialect which he means to deliver good and healthy taste to all dinners. When asked about his future plan, Shin said that he wished to have 5 branch restaurants in the near future through systematic management and authentic recipes.
