Making contribution to commercialization of cyclic dipeptides in kimchi lactobacillus
The lactobacillus in kimchi can be a highly profitable fermented food as it does not cause allergy issues like cheese. We can eat kimchi straightaway or make it into a medicine or a fermented food and much more. In this respect, it is worth mentioning Kang Sa-Ouk, Biophysics and Microbiology Professor of Seoul National University Biological Sciences, who found cyclic dipeptides (anti bacterial, antifungal, and antiviral substance) from kimchi and spread its excellence to the world by beating the Japanese assertions that kimchi originated from Japan. Kang said that the anti-cancer effect came from richly fermented ripen kimchi which made it hard to intake directly so he focused on using culture fluid of its extract. And the probability of its commercialization was enhanced by the BBC’s documentary on the culture fluid’s curing effect for AI and the MBC’s special documentary on proving kimchi’s anti cancer effect. Since 2015, Kang and Shenzhousi, China have collaborated to parcel out the culture fluid and are exporting the manufacturing technique of feedstuff additives. Also, Kang found similar effect in soybean paste, fast-fermented bean paste and fermented fish. Kang has obtained 20 patents related to microorganism home and overseas. He proved its effect at effective binding of 10 kinds among 400 of 20 amino acids and published his paper in a Korean microbiology journal. He said that it was time to pay attention to development of antivirus medicines. 

Metabolic process of methylglyoxal can reveal the grounds for preventing and curing of infectious and degenerative conditions 
Kang has carried on his research on microorganism for the last 40 years and has paid a greater attention to methylglyoxal for the last 10 years and published a paper. Methylglyoxal is found at the halfway microorganism of carbohydrate appetite of glucose and lactic acid fermentation. It is a substance occurred during the high carbohydrate appetite process and in organisms. It causes diabetes, cancer, Alzheimer’s and Parkinson’s but at the same time improves immunity and respiratory functions. For this reason, people used the fat that makes keton acetate during the metabolic process to remove toxicity of methylglyoxal. It created a global trend of intake high fat low carbohydrate diet. Kang said that methylglyoxal was said to cause pains and accelerates aging so we must be careful not to take too much of the related carbohydrate. Instead, Kang sees the possibilities in soybean paste, fast fermented bean paste and fermented fish. Regarding these anti-cancer substances, Kang pointed out the fact that Koreans have consumed 50 to 100 times more concentrated amount of anti-cancer substances than other races but problems have not arisen. Kang said that the synthetase to make antivirus medicines had already been found and related papers were also published so he was focusing on development of microorganism for mass production. Kang explained that these anti-cancer and antivirus substances exist in lactobacillus culture fluid so we must focus on development of the microorganism technology that can reveal mass culture fluids and their parceling out. Because these substances can be ‘the master key’ to cure almost all diseases of human as they are effective for both infectious and noninfectious diseases. According to Kang, the research is in the initial stage but we will be able to export Korean microorganism technology if we realize mass production. It can also make contributions to the health of world citizens and this is the reason we have pay attention to Professor Kang.
