From commoner’s food to nutritional food
Ujoktang is an ox foot soup containing the leg bone and flesh. Yet Kim Pan Sheo Jeongju Ujoktang has its unique story and taste according to the founder of the restaurant Kim Pan-sheo and his wife Kim Hyo-soon, and their son, and the gradson son Kim Dong-woo, the current CEO of this family business; the ‘jok’ of ujoktang was originated from the method of boiling the bones split by an axe rather than the foot parts themselves; so the Kim Pan Sheo Jeonju Ujoktang did not necessarily always contain the foot parts but its secret recipe has delighted gourmets all over the nation for the last 60 years. Back then, a number of Jeonju Ujoktang operated its business and Kim Pan-sheo and CEO Kim Dong-woo added ‘Kim Pan Sheo’ in the front to differentiate its unique recipe and taste from others and registered its official brand name. The ox head and foot are boiled based on daily consumption only, the authentic soup releases deep taste when hot and becomes lump when cold, and the low salt and nutritional grains and vegetables remove its unique smell but give a clean taste. Like many rice soups in Korea that started to be serviced for commoners at traditional markets, Kim Pan Sheo Jeonju Ujoktang also started as commoner’s food to have secured its fame as a nutritional food today through years since 1956.

In fact, everybody can use ‘Jeonju ujoktang’ as their business name but those who lived long in the region know that Kim Pan Sheo Jeonju Ujoktang is the originator: originator for Kim means not putting the business name itself but the recipe and the soul of the maker that has passed down through generations. And this family business spirit has been well kept and passed down among the family members, according to him. Meanwhile, Kim won the gold prize (educational ministerial prize) at the Jeonbuk Food Festival and the bronze prize at the 2017 Korea International Food & Confectionary Competition. Gathering all of these achievements, Kim is working hard on listing Kim Pan Sheo Jeonju Ujoktang in the Michelin Jeonju Guide and the nationally approved Local Specialty while also promoting the founder Kim Pan-sheo to be recognized as a master cook: if approved, a support to foster 7 apprentices is provided. The founder Kim Pan-sheo of Kim Pan Sheo Jeonju Ujoktang started his career as a kitchen porter in 1956 and his spirit and expertise are still vividly alive today and will be passed down. <Power Korea> sends a message of support.
