Not everything of old might be called good. With the tradition and the effort in passing it down intact certainly is needed to be called as such. In this respect, we cannot miss mentioning Haebangchon Buheung Noodle's 70 years of expertise in traditional noodle making. It all started in the 50s and the tradition was taken over by the current CEO Gwon Wan-gu in 1998. Gwon engaged himself in distribution and whole sale industries but travelled the nation in order to find the original taste of Buheung Noodle before he learned the very skill from a noodle master and opened the current noodle restaurant nearby Uijeongbu Intercity Bus Terminal. "Al dente tenderness is vital in noodle. Buheung Noodle is made with hand-hit mechanical method and goes through the process of dry and maturing to realize the chewy yet tender texture either hot or cold" explained Gwon. To further enhance the traditional methods, Gwon developed a new noodle machine and broth and has introduced 5 menus in total. Banquet Noodle (1~2 day matured spice with anchovy and kelp broth) and Watery Mixed Noodle (a variety of vegetables, medicinal herbs and enzyme liquid) among them are particularly good.

A bowl of Buheung Noodle costs 5,000~6,000 won with generous quantity. Its popularity was well proved by appearing on numberous TV shows and excellent customer feedback on SNS. Gwon pointed out 'tradition' and 'modern taste' as the two core elements of his success in addition to the fresh ingredients and al dente tenderness. Gwon is running three Buheung Noodle restaurants at the moment in Uijeongbu, Yangju and Dongducheon. The noodles made in the Buheung factory receive a warm welcome from various festivals and large restaurants as well as for the use of gift. We can also order for delivery and Gwon is planning to launch online sales and to open a noodle experience hall in near future.
