Korean's love of jjamppong (spicy seafood noodle) is in full swing as it meets the perfect season. Many jjamppoing specialized restaurants are eager to attract more jjamppoing lovers and one of them is Jjamppoingshinhwa. CEO Heo Sang-haeng jumped into Koreanized Chinese cuisine in 2007, the year the 'mountainous mussel jjamppoing' was creating a sensation in the market and the person who invented the food was him. Within several month of launching the business, the sales jumped triple and Heo had to suffer from flooding inquires for interviews and media appearances.

"Not only celebrities paid a visit to my restaurant but even the rivals to find out the secret. Many of them, however, were rather doubtful whether it could make a profit but they started to follow soon with similar menus when witnessed the sales kept marching up" said Heo in retrospect. Not complacent, he pushed forward R&D for new menus. Heo continued "Restaurant business, I think, requires thorough preparation and strategies. The once trendy 'fusion food', for example, lost its presence long time ago and many of current jjampong restaurants are too much emphasizing on sing menu from which they are losing competitiveness. This is the reason I keep focusing on development of new menus without losing the traditional value of the food." Heo's creative zeal did not stop here. He created a sensation in the market by introducing 'natural condiments' for the first time in the food franchise industry by signing a business agreement with 'Chungjungone Matsunsaeng'. This was soon followed by his latest invention: 'Yetnaldon Jjampong (old pork jjampong)'. The unprecedented deep broth topped with generous vegetables and pork is truly captivating the taste buds of all most all diners at Jjamppongshinhwa. Moreover, he developed a liquid type jjampong sauce through three times of upgrade. The secret of the sauce is shared by all the staff of the Jjamppongshinhwa restaurant nationwide through systematic training and diners are guaranteed with consistency in taste. "One of the biggest drawbacks is that the taste of the same dish differ from branch to branch though the recipe and ingredients are the same. This is because each chef has different level of skills. But our systematic and strict training has made it even and it also helps reduce production cost" explained Heo.

Growing together, making it happen together
The continued investment in R&D and the systematic training certainly have been the driving force of Jjamppongshinhwa. "Unlike in the past, young people nowadays do not make an effort if they think that there is nothing to learn. This is very encouraging and it meets my management philosophy to make all the recipe open to fill their desire to learn" said Heo. Currently, Heo runs 23 Jjamppongshinhwa restaurants nationwide and the number is expected to go up thanks to a competitive price in addition to its unrivaled taste. "Every business has as much a risk as the possibility of a success. Experience has told me that the trend does not necessarily guarantee a success. In other words, one must be thorough when thinking of starting a business. And we are confident to say that we will be a good business partner of those who will grow together with us for 10 or 20 or even more years through sharing and responsibility" said Heo adding that "Chinese cuisine in Korea has proved to be stable no matter which dish was creating a sensation in the market.
