달콤한 와플과 짭조름한 치킨의 풍미, ‘Rustic Comfort’

맛집이 ‘맛’으로만 승부하는 시대는 지났다. 오히려 요즘 맛집의 트렌드는 맛과 함께 ‘비주얼’이 무엇보다 중요해진 것 같다. 맛집임을 인증할 수 있는 방법 중 하나가 블로그나 인스타그램에 올라간 ‘포스팅 갯수’라는 말은 현대인들에게 ‘맛’만큼이나 ‘보여지는 것’이 얼마나 중요한지를 잘 알려준다. 이번호 <월간 파워코리아>에서는 최근 SNS를 통해 뜨거운 관심을 받으며 춘천의 새로운 명소로 떠오르고 있는 ‘러스틱컴포트’를 찾아가 봤다.

맛에 감성을 더하다
강원대학교 춘천캠퍼스 맞은편의 아파트 단지를 끼고 도는 길을 따라 250m 가량 걷다보면 화려한 네온사인과 파벽돌로 장식된 외관이 눈에 띄는 러스틱컴포트(Rustic Comfort)를 만날 수 있다. 두툼한 문을 열고 들어가면 따뜻한 느낌의 원목 테이블과 빈티지한 감성이 가득 묻어나는 벽면이 눈에 들어온다. 물론 그보다 먼저 시선을 잡아 끄는 건 매장 중앙에 매달려 있으면서 좌중을 압도하고 있는 화려한 샹들리에다. 

넉넉한 크기의 테이블과 세련되고 감성적인 공간으로 찾아오는 이를 감동시키는 이곳은 독특하게도 치킨과 와플, 커피를 함께 판매하는 곳이다. 유근모 대표는 “치킨&와플은 미국 남부 쪽에서 잘 만들어 먹는 조합이에요. 국내에도 몇 군데 들어와 있긴 하지만 아직 대중화되어 있진 않죠. 저희는 치킨과 와플의 조합이 치킨을 유독 사랑하는 우리나라 사람들에게 충분히 새로운 매력으로 어필할 수 있을 거라 생각하고 제품 개발에 돌입하게 됐어요”라고 설명했다. 그 결과로 탄생한 것이 대표 메뉴 중 하나인 ‘치킨&와플’이다. 퍽퍽한 가슴살 대신 부드러운 허벅다리살을 사용했으며, 10가지 재료와 허브로 마리네이션을 해 풍미를 더했다. 매일 아침 직접 반죽해 구워낸 와플은 고소함과 달콤함으로 치킨과 묘한 어울림을 자아내며, 알싸한 파는 두 가지 맛을 한 번에 잡아준다. 이에 더해 또 다른 대표메뉴인 ‘칙&치즈’에서 또한 이들의 고심이 엿보인다. 바삭한 치킨과 프라이 위에 얹은 100% 천연치즈는 오븐 안에서 부드럽게 녹아들어 환상적인 비주얼을 만들어내며, 바질의 향을 더해 치즈의 느끼함을 덜어냈다. 신선하고 깨끗한 재료만을 사용하며, 30마리 이상 튀기면 무조건 기름을 교체하는 원칙은 메뉴의 맛을 더욱 깔끔하게 만든다. 또한 세계적인 명성의 최고급 이태리 커피 브랜드인 일리 커피(illy coffee)를 3~4천 원대의 저렴한 가격에 만나볼 수 있다는 것도 이곳만의 장점이다. 

러스틱컴포트, 토탈브랜드로의 도약을 꿈꾸다
지난 9월 오픈해 아직 3개월이 지나지 않았지만, 러스틱컴포트에 대한 관심은 그야말로 놀라울 정도로 뜨겁다. 블로그나 SNS 등에서 폭발적인 호응을 받고 있는 것이다. 더욱 놀라운 것은 많은 이들이 칭찬해마지않는 인테리어의 모든 부분을 유근모·유근찬 대표가 직접 했다는 것이다. 유근모 대표는 “벽면을 장식한 벽돌은 중국에서 100년 이상 된 집들이 철거되며 나온 자재들이에요. 바닥은 이태리제를 가져다 썼고, 화장실 타일도 스페인제를 사용했죠. 피자 그릇도 이태리 제품이에요. 사람들이 이런 부분을 전부다 알아줄 수는 없겠지만, 그저 이것만으로도 다른 곳과는 다른 러스틱컴포트만의 느낌을 줄 수 있다고 생각했어요”라고 밝혔다. 

언뜻 젊은 CEO의 성공기처럼 들릴지 모르나, 그에게도 어려움은 있었다고 한다. 같은 위치에 있던 대기업 프랜차이즈 치킨 가맹점을 운영했던 경험이다. 당시 지역 100여개 지점 중 거의 꼴지를 하던 매장을 인수해 매출 1위 매장까지 올려놓는 성과를 달성했지만, 본사와 방향이 달랐다고 한다. 이러한 경험 때문인지 러스틱컴포트를 운영해나가는 그의 각오는 남다르다. 그는 “가장 중요한 건 다함께 성장하고, 성공하는 일이라 생각해요. 함께하고 있는 직원들을 진짜 가족처럼 여기면서 즐겁고 행복하게 일할 수 있는 공간을 만들어가고 싶어요”라며, “운영이 어느 정도 자리 잡히게 되면 프랜차이즈 확장도 생각하고 있어요. 인테리어도 제가 직접 해본 경험이 있어서 다른 곳보다 훨씬 저렴하면서도 고급스럽게 진행할 수 있고, 식자재나 조리법도 충분히 경쟁력 있게 진행할 수 있다고 생각해요. 무엇보다 모든 부분을 투명하게 공유하면서 기존과는 다른, 서로 신뢰할 수 있는 관계를 만들어가고 싶어요”라고 밝혔다. 이들의 아름다운 도전이 멋진 결과물로 돌아올 수 있기를 바란다.

The Tasty Combination of Sweet Waffles and Salty Chicken

The trend tells that the taste itself cannot guarantee a success in restaurant franchise nowadays but the visual which is increasingly important, in terms of marketing, due to the explosive popularity of photo-based SNS such as Instagram. <Power Korea> met Co CEOs Yu Geun-mo and Yu Geun-chan of Rustic Comfort.

The Chicken Spiced With Style
Walking the pedestrian alongside with the apartment block in front of Kangwon National University Chuncheon Campus for 250 meters, you can see a restaurant with pinky and bluish neon sign hung on bricked wall. It is Rustic Comfort, a chicken and waffle restaurant. Opening the heavy door and stepping inside wows you first with the splendid chandelier hanging in the center. Then the warm wooden tables and vintage concept walls invite you comfortably to a seat you put your eye on. 

“The combination of chicken and waffle, CEO Yu Geun-mo explains, is one of the common foods in the southern states of the U.S. There are a few chicken and waffle restaurants in Korea but many people still don’t know about the food. So I examined the business potential and opened Rustic Comfort.” 

Yu marinates chicken thighs with 10 kinds of herbs and ingredients to give tender taste and flavor and bakes waffles every morning to keep freshness and sweet taste. The combination of chicken and waffles then is completed with sliced spring onions on top. Chick & Cheese, on the other hand, is made of crispy chicken and fries topped with 100% natural cheese melted in the oven to give fantastic visual and is finished with basil. Yu only uses fresh ingredients and changes the vegetable oil after frying every 30 chickens to give clean taste. It is an additional pleasure to enjoy illy coffee at KRW 3,000-4,000 at Rustic Comfort. 

Growing Together Is The Key To Success
Rustic Comfort opened its door last September but people’s response is explosive especially on blogs and SNS. The unique interior is also done by Co CEOs Yu Geun-mo and Yu Geun-chan. “We used the bricks that came from the ruins of more than 100 year old houses in China. The floor material is Italian and the restroom tiles are Spanish. The pizza plates are also Italian.” 

Yu once ran a chicken restaurant of major franchise that has 100 branches in the current location. It was the least performer among 100 but Yu made it top. Despite his proved capability in business, he quit due to discordance in the business directions. “I think growing together is the key to success. Open and transparent management build trust between the management and the partners. We have experience and knowhow in recipe, interior and management and we are ready to launch a franchise business.”
