Mushroom Barley Bread rising as a new specialty of Gyeongju City


Gyeongju, the thousand year old capital of the Silla Kingdom, attracts large numbers of sightseers every year. Among those local specialties such as Hwangnam Bread and Gyeongju Bread, Mushroom (Hericium erinaceum) Barley Bread is rising as a new specialty functional food with the mushroom’s proven nutritional value that prevents dementia and diabetes.

Hericium erinaceum (mushroom) has been less favored as a food due to its bitter taste for a long time. But its proven nutritional elements encouraged people to use it for various foods today. I grew the mushroom by myself, ground it and mixed it with various medicinal herbs, red beans and barley through automated process to complete a new functional food.” Jo has worked in the bakery industry for a long time and his knowhow and experience are well instilled into the bread. Jo borrowed the image of the thousand year smile of Emaile Bell to give unique shape yet symbolic meaning to the bread. Growing together with farmers

Jo came to know about the mushroom through Ohgyeong Farm (famous for zellan egg) and when asked about his future plan, he said “I and Ohgyeong Farm will work together to spread excellent taste and nutrition of Mushroom Barley Bread to more people and we will also actively take part in raising the city’s brand value.”
