Wumaimaru means 'the best taste'. First opened in Danggam-dong, Busan in 2009, there are currently 5 branches operating now in Busan. Wumaimaru’s two main menus are pork cutlet and cold buckwheat noodles made with fresh ingredients in the strictly hygienic kitchen. CEO Jin said "Cooking for me is an art which needs one's sincere heart. Rather than making a challenge to the current trend of fusion dishes, I focus on only two specialities to make a success. In order to do that, one must be the best in the food. Knowhow as well as using fresh ingredients are a must for that. The former especially I believe comes from one's sincere heart. In terms of the latter, you'd better make profits by creating differentiated taste with fresh ingredient rather than reducing the portion of the dish. With this philosophy in mind, I established Wumaimaru meaning 'the best taste'." Jin added that his goal was to pioneer global market over Korea in near future.

The hand-made pork cutlet delights your taste buds
It is not easy to make regulars and to be the top in the food service industry. Jin used to work in the distribution industry but he developed an eye for the basic elements of what is called 'the best taste' and this eventually brought him a success. He said "I worked in the distribution industry for 18 years and came to know a person who made hand-made pork cutlet. It was 5 years ago when I started to learn to make pork cutlet. Now as CEO of Wumaimaru, I'm in charge of everything from developing sauces and recipes to management." Jin cuts pork meat into thin slice, covers it with batter and fries to make a pork cutlet. It can be easily developed into new menus in combination with other ingredients or food and this made the food very popular for many restaurants according to Jin. The menus of Wumaimaru's include 'Unfrozen 100% Imsil Cheese Pork Cutlet', 'Sirloin Pork Cutlet', 'Tenderloin Pork Cutlet', 'Fish Cutlet', 'Chicken Cutlet', 'Udon', 'Sirloin Pork Cutlet Nabe (hot soup)', 'Pork Cutlet Rice', 'Iron Plate Pork Cutlet', 'Tenderloin Pork Cutlet Curry', 'Cold Buckwheat Noodles', 'Warm Buckwheat Noodles', 'Mixed Buckwheat', 'Mixed Buckwheat Soup', 'Sanuki Udon' and 'Sanuki Stone Bowl Udon'. All noodles come with flying fish roe-rice ball made of 100% sesame oil. CEO Jin also uses self-developed sources and broth for some of the noodle dishes. Jin said "Freshness and excellence of the ingredients are the key to tasty pork cutlet and buckwheat noodles. We don't use frozen pork but use 100% pure vegetable oil and Imsil cheese. We also use quality flesh of red catfish to create a clean and flavory taste and never use artificial flavor enhancer." The sauces for mixing and fish cutlet are directly made in each branch and the vegetable sauce made of ground fruit is delivered to each branch twice a week. Also, the vegetable and salad sauces and the udon and buckwheat broths are boiled in the Wumaimaru's factory daily. Jin said "People boil sauces because they otherwise lose their good taste but only leave salty or sugar taste when sterilized. But our sauces keep the good taste even after sterilization and we keep them in the fridge for freshness. I feel really worth whenever our customers show a great satisfaction after having one or two of our menus. Cold Buckwheat Noodles are especially popular in summer thanks to our fresh and quality ingredients as well as our expertise in cooking"

Pioneering global market
Jin currently has five Wumaimaru branches in Danggam-dong, Jobang-dong, Myeongnyun-dong, Geonggwan-dong and Citizen's Park in Busan. The success he has so far achieved in the field, Jin now is planning to turn his business into franchise and is actively recruiting branch owners ideally who have had an experience in the distribution industry or a couple. You need KRW 3 million for franchise fee and 2 million for one month training but there is no royalty. Jin also will help you find an ideal location for your branch. Branch owners surely can make profits as long as they follow the recipe they learned in the training. It is our management philosophy to grow together and we will provide everything we can for our member restaurants." With the goal of opening 200 branches nationwide, Jin is also planning to enter overseas market especially in China, South East Asia and the US step by step.
