Reducing the initial investment probably is the most important element for many startupers. A store in a commercial area cost you about KRW 100 million to run a business nowadays. CEO Kim Hyeon-soo of The Dak says "Rather than running a large restaurant on the first floor, I started with my idea to create profits with a 82 square meter restaurant in the basement or on the second floor. You can start with no more than KRW 50 million. Of course it still is a big money but is much better when compared to other franchises. The payback period also is about 10 to 15 months. This is not my prediction but is a result of actual operation and management." He continues "I think the speed of cooking is the key to serve quick and prepare for next customers. You normally should book a table an hour ago to have a braised spicy chicken. But the recipe of The Dak can prepare it in 10 minutes. It is specially good for those office workers whose lunch hour lasts only an hour. In a word, simplicity and speed is the biggest advantage of The Dak." Kim has one principle to keep; all the owners of The Dak must be able to make the dishes. Kim explains "It is important for a restaurant owner to develope a menu that might satisfy all the age group. I personally emphasize on simplicity in recipe and management so that customers can feel satisfaction in taste and the speed of serving." Kim learned cooking from the basic in Japan and pointed out that just giving a training cannot make a good store owner in the food franchise business. He says "They need to know everything about cooking and the kitchen in addition to management skills. It is especially important to maintain a high level of hygiene in the kitchen as The Dak's is show kitchen." Kim is happy nowadays as his branch restaurants are doing very well in the market. To keep the business rolling in steady profit, Kim never encourages them to create maximum profits but to run the business on basic management principle and honesty.
