건강을 위한 ‘한 컵’의 습관, 콜드프레스 주스가 뜬다

미국 대도시를 중심으로 선풍적인 인기를 끌며 음료 비즈니스 시장의 새로운 트렌드를 형성하고 있는 ‘주스바(Juice Bar)’가 최근 국내 창업시장에서도 돌풍을 예고하고 있다. 침체기에 접어든 기존의 커피 시장을 대체할 것으로 기대되고 있는 주스바는 건강한 식생활을 추구하는 소비자들이 많아짐에 따라 ‘Raw Food(생식)’ 문화를 대표하는 아이템으로서 급부상하고 있다.

콜드프레스 공법으로 맛과 영양을 동시에 잡다
비타민과 미네랄, 식시섬유 등 우리 몸에 필요한 영양소를 보충하려면 성인 기준 하루 약 400g의 채소와 과일을 섭취해야 한다. 그러나 탄수화물 위주의 식단과 짠 음식을 즐겨먹는 우리나라 사람들의 하루 채소 및 과일 섭취량은 권장량의 30~40% 수준에 불과하다고 한다. 이러한 문제를 해결해 줄 수 있는 아이템으로 주목받고 있는 것이 일명 ‘클렌즈 주스’라 불리는 프리미엄 생(生) 주스이다. 

우리나라보다 먼저 이러한 프리미엄 생 주스가 인기를 끈 곳은 바로 미국이다. 뉴욕과 LA 등 대도시를 중심으로 퍼져나가기 시작한 생 주스 판매점 ‘주스바’는 미국 전역에 약 6,200개에 달하는 것으로 파악되고 있다. 신선한 과일과 채소를 주재료로 해 건강을 생각하면서도 맛과 가격까지 만족시킨 것이 성공의 주요인이다. 특히 기존의 가정용 착즙기를 대체한 콜드프레스 방식의 상업용 착즙주스기계의 등장은 주스바 열풍에 큰 역할을 했다. 그 중에서도 30년 전통의 콜드프레스 착즙주스기계 전문업체 ‘굿네이처(Goodnature)’가 개발한 ‘X1’은 단연 뛰어난 생산성과 경쟁력으로 세계적인 판매고를 올리고 있는 제품이다. 심플하고 감각적인 디자인의 X1은 직경이 약 90cm로 슬림해 좁은 공간에도 배치할 수 있고, 바퀴가 장착되어 있어 손쉽게 이동 및 보관이 가능하다. 또한 강력한 성능으로 부드러운 재료는 물론이고 단단한 야채와 엽체소류, 각종 과일과 견과류에 이르기까지 다양한 재료를 깔끔하게 착즙할 수 있으며, 시간당 75L까지 착즙이 가능해 생산성이 뛰어나다. 최고급 스테인리스 스틸을 사용해 내구성이 뛰어나고, 착즙기 전체를 방수 처리해 손쉬운 물세척이 가능하다는 것도 특징이다.

X1의 가장 큰 강점은 착즙 시 발생하는 열을 최소화하는 유압식 콜드프레스 공법을 사용하고 있다는 점이다. 굿네이처 X1의 국내 독점판매를 담당하는 ㈜폼로이코리아의 김용환 대표는 “기존 가정용 착즙기는 스크류가 회전하며 과일과 야채를 으깨는 스퀴즈(Squeeze)방식으로 착즙과정에서 공기가 유입돼 산화가 촉진되고, 마찰열로 인해 일부 영양소가 파괴되기도 합니다. 또한 주스에 찌꺼기가 다량 섞여 들어가기 때문에 목 넘김도 부드럽지 못한 문제가 있었습니다. 반면 콜드프레스 공법은 분쇄된 과일과 야채를 촘촘한 망에 담아 수 톤의 압력으로 프레스해 짜내는 방식으로 영양소 파괴가 거의 없고, 찌꺼기 없이 부드럽게 즐길 수 있어 최근 젊은 여성 사이에서 디톡스 주스 또는 클렌즈 주스로 각광받고 있습니다”라고 설명했다. X1은 미국의 유명 주스바인 ‘Juice Press’, ‘Organic Avenue’, ‘Liquiteria’ 등을 비롯해 ‘Whole Foods Market’ 등의 인기 오가닉 마켓에서도 사용되고 있으며, 최근에는 호주와 일본에서도 인기를 모으고 있다. 국내의 경우 콜린스그린, 머시주스, 블루프린트, 주시브로스, 스테이베리, 힐링포션 등의 주스바에서 X1을 사용하고 있다. 
콤펙트한 디자인과 우수한 성능, 신제품 CT7 출시
김용환 대표는 “과거 미국에서 대학 생활을 하던 시절 콜드프레스 주스를 처음 접하게 됐습니다. 기름진 식습관과 업무 스트레스 등으로 척추에 염증까지 생긴 뒤에야 건강을 회복시키기 위해 이것저것 알아보던 와중이었죠. 이후 두 달 동안 콜드프레스 주스를 식사대용으로 마시면서 효과를 경험할 수 있었고, 결국 질병을 이겨낼 수 있었습니다”라고 말했다. 한국에 돌아와서도 콜드프레스 주스를 잊지 못한 김 대표는 굿네이처의 착즙기를 국내 독점 공급하기에 이른다.

그는 “주스바 창업 시 가장 고려해야할 부분은 ‘어떤 착즙기를 사용하는가’입니다. 주스바의 성공여부가 결국 주스 본연의 맛과 효능, 두 가지에 달려있기 때문입니다”라고 설명했다. 이러한 이유로 굿네이처를 선택한 김용환 대표는 지난해 야심찬 신제품 ‘굿네이처 카운터톱 CT7’을 시장에 선보였다. 폼로이코리아를 통해 국내 독점 수입·판매될 ‘CT7’은 지난해 미국 유명 식음료매체인 ‘BEVNET’를 통해 출시 소식이 특집으로 다뤄지며 이슈가 되기도 한 제품이다. CT7은 세계 특허 출원 중인 콤팩트한 디자인과 일회용 백으로 작업시간을 획기적으로 단축시켜주며, 초보자도 손쉽게 사용할 수 있을 정도로 조작이 간편하다. 하루에 수백 병의 착즙주스를 생산할 수도 있으며, 한 번에 한잔씩 소량 착즙하는 것도 가능해 대형매장은 물론, 소형매장에도 적합한 제품이다. 김 대표는 “CT7은 항공우주산업용 알루미늄 스틸로 제작돼 견고함을 더했고, 카페환경에 맞게 소음을 최소화시킨 것이 특징입니다. 특허기술인 일회용 생물석 필터 백은 폐기가 수월해 환경오염을 방지할 수 있으며, 고수율 프레스 착즙방식으로 효율성을 극대화시켜 제조원가를 절감할 수 있습니다”라고 밝혔다.

또 CT7은 탈부착이 가능한 디자인으로 세척이 용이하며, 시간 당 최대 34L를 착즙할 수 있어 점심시간 많은 고객이 몰리는 매장에서도 고객 대응이 수월하다. 김 대표는 향후 ‘건강한’ 음료 시장이 더욱 각광받게 될 것이라고 전망했다. 선진국을 중심으로 확산되고 있는 Raw Food 열풍은 그 첫 단계다. 그는 “신제품 CT7은 주스바는 물론, 카페와 레스토랑, 푸드트럭 등 어디서나 두루 사용할 수 있는 ‘작지만 강한’ 콜드프레스 착즙기입니다. 이미 지난해 코엑스에서 개최된 ‘서울 카페쇼’에서 뜨거운 호응을 받은 바 있으며, 오는 3월에는 부산 벡스코 ‘커피앤디저트쇼’ 전시를 앞두고 있습니다”라고 밝혔다.

The cold press method satisfies both taste and nutrition
We are advised to intake 400g of vegetable and fruit to meet our daily nutrients necessary. But many Koreans, who love salty and spicy food, take only about 30% to 40% of the recommended daily requirements. A fresh premium juice called 'cleanse juice', for this reason, is attracting many of the busy modern people's attention at the moment. It first became popular in the US and there are currently about 6,200 juice bars which sell this cleanse juice in the states. It is made of fresh vegetable and fruit with agreeable taste and nutrition. This was possible thanks to the commercial juice extractors which use the cold press method. Among these extractors, Goodnature's 'X1' has made a record sale globally. The design of X1 is simple and sensual with a slim body of 90cm in diameter and the attached wheels make it easy to move. It can extract vegetable, fruit and nut products up to 75L per hour. Its stainless steel also gives high durability and its water-poof coating makes it easy to wash and dry. But the hydrodynamic cold press method, above all, is the biggest advantage of X1 as it minimizes the heat occurred when extracting.

Pomeroy Korea is the exclusive seller of X1 in the domestic market and CEO Kim says "The existing home extractors use the squeeze method which invites the air during the process to make food oxidized and the frictional heat breaks the nutrients. Also, the extract contains the residue of the food which makes it difficult to swallow. The cold press method of X1, on the other hand, presses the food through the dense net to prevent all those drawbacks of the existing home extractors." X1 is used in many famous stores in the US such as Juice Press, Organic Avenue, Liquiteria and Whole Foods Market and its popularity is now spreading to Japan and Australia. In Korea, Colins Green, Mercy Juice, Blue Print, Juicy Bros, Stay Berry and Healing Portion are using X1. 

CT7 boasts compact design and excellent performance
CEO Kim says "I came to know about cold pressed juice when I lived in the US and suffered from inflammation of the spine caused by oily diet and work stress. I had taken the juice for 2 months and it actually cured the disease and improved my health." Kim then decided to introduce the juice to Korea when he came back home. He continues "If you are thinking of opening a juice bar, you need to take into account which extractor you will use at first because the success of your business depends on it." Last year, Kim introduced 'Goodnature Countertop (CT7)' to the Korean market and the news was reported on a famous food and beverage magazine BEVNET, US. The design of CT7 is in the process of obtaining a patent at the moment. It is easy to use and you can save a considerable amount of time for extracting hundreds of bottles of the juice a day. Kim continues "CT7 is made of the aluminum steel used in the aerospace industry. CT7 minimized the noise but maximized efficiency.

Also, it uses the patented eco-friendly disposable bio pack for environment." In addition, you can separate the parts for easy wash and can extract up to 34L per hour which is especially good for the busy lunch time. Kim predicts that more people will seek healthier food as the raw food sensation is widely spreading in the advanced countries. He added "Thanks to its compact and portable design, you can use CT7 everywhere. It already attracted a great attention at the Seoul Cafe Show at COEX last year and is scheduled to be displayed at the Coffee & Desert Show in BEXCO, Busan in March this year."
