Introducing Songhwa Mushroom grown in a land of sun, wind and clean air & water
Song happened to know about Songhwa Mushroom when he was working in Suwon City. He decided to live in a rural area and prepared for 2 years. Song says "I knew the mushroom by chance. It has good taste and is nutritious but the thing that attracted me most was that it was a highly profitable crop. The mushroom is well known in the capital area but not in Yeongnam area. So I decided to return to Miryang, my home town, to grow the mushroom." Songhwa Mushroom is a mutated mushroom of Shitake Mushroom which normally produced about 2% but it is now possible to mass produce thanks to modern technology. While the stem of Shitake Mushroom is thrown away, Songhwa Mushroom's can be eaten as a whole if the bottom part is removed. The mushroom has pine scent with chewy taste which is like a combined version of Pine Mushroom and Shitake Mushroom. This is the reason why Songhwa Mushroom is becoming popular. Song says "I thought it was easy to cultivate at first but it turned out very difficult. Songhwa Mushroom need just a right amount of light while other mushrooms grow in wet and dark places. It was impossible to cultivate it in summer but it is now possible thanks to the technology. 

It takes one month to grow the mushroom and release to the market. Its economic feasibility is also very good as you can cultivate up to 3 times in the same field. But the biggest drawback is that the cultivators are having a hard time to find a market as it is still less known to people. Song says "its taste and smell are second to none when compared to Songi Mushroom and Shitake Mushroom but lack of popularity make it really difficult to find a market. For this, I advertised the mushroom by providing a free tasting event in various expos held in Busan and Daegu for the last one year." Thanks to Song's effort, Songhwa Mushroom is now supplied to major department stores and Lotte Mart.

Songhwa Mushroom is one of 10 good food chosen by FDA (US) in 2004. It is good for blood, diabetes, high blood pressure, heart disease and osteoporosis, and contains 9 essential amino acid, minerals, vitamin B1, B2, B3 and pro vitamin D2. It is also said in ancient oriental medical books that it cures stroke and is effective for a cold and virus related diseases. Song says "Songhwa Mushroom is widely enjoyed among Asian people due to its savory smell and smooth taste. Especially, it goes well with pork because the dietary fiber in the mushroom delays the absorbing of cholesterol contained in the pork. Also, vitamin D in the mushroom provides calcium to the bones which is good for children to grow, and lenthionine in the mushroom is effective for clearing our brain. In addition, the mushroom contains almost zero calorie which is perfect for a diet. 45% of the mushroom is fiber which boost up the bowl movement so that it can release waste in the body effectively."

Song started cultivating the mushroom 1 year ago but is currently expanding 5 cultivating rooms and 1 technology laboratory to provide more Songhwa Mushroom to people. The facilities can enable Song to produce 80 tons to 100 tons of the mushroom per year and he is also planning to deliver his skill to those who want to get involved in the business. Song says "we are still in the beginning stage and there are many thing to be done to promote the mushroom. For this, I and my staff will do our best to spread the mushroom nationwide through active R&D." Song's goal is to pioneer the markets in Japan and South East Asia in the furture.
