Pizza liked by anyone, regardless of age and sex, have been  long loved as a typical eat-out item because of various tastes from diverse toppings. More recently, unlike the former large franchises, medium and small companies have appeared to appeal to customers making for the boom of pizza. We visited JEJUMORU, a brazier pizza restaurant of Jeju which is drawing attention with fresh ingredients, differentiated tastes and special technique. 

With as much freshness as Jeju 
Now you can find every fashion and kind of pizzas everywhere in the country. More and more small pizza business are competing with a large franchise with only competitive item and unique concept helped by spread of the consumer culture of looking for varied tastes. Consumers who want unique and tasty pizza would readily go a hundred miles for their wanted pizza. 

In Jeju, which is famous for scenic beauty, many visitors from outside never fail to patronize this brazier pizza restaurant JEJUMORU, located at Nohyung-dong Jeju city. With interior associated with a snug, elegant kitchen, ‘JEJUMORU’ is a gourmet restaurant of pizza practically known to all inhabitants of Jeju-do. Lim Kyung-mo, who has been running the pizza house for 8 years in Jeju, explained, “’Moru’ is the name from Jeju-do dialect meaning ‘a flat at a high level.’ We are running it with a mindset of serving a delicious food to customers anytime and anyplace.” 

Notably, JEJUMORU is more popular among foreign people. With the sweet favor from 100% natural cheese they use, menus like ‘Jeju pizza containing fresh tangerine, ‘Berryberry yogurt pizza’ with blueberry and cranberry, etc. are making deep impression on visitors from foreign countries.  

The world’s first ‘candle pan’ developed after 3 years’ efforts 
It is widely known that a new item is important in a startup of restaurants. Though what is new involves so much time, effort and risk, Lim has an unusually thorough challenging spirit. “At an initial stage for the shop, there were many likes and dislikes among customers because we had to make several experiments on our part. Some preferred a new menu while others expressed disapproval because it was not familiar. We had both many enemies and friends at that time.” Despite many difficulties, however, Lim never gave up his challenging spirit. Jeju pizza and Berryberry yogurt pizza were the menus of his own developing for the first time in the country. He also devised a story menu to provide customer-oriented service by helping them understand the menu. 

Candle pan is the acme of CEO Lim’s challenging spirit. Candle pan, which is the world’s first vessel for pizza using both convective and conductive heat, is the product of his enthusiasm about pizza combined with the government’s support project. CEO Lim said, “Pizza baked and coming out of the brazier is subject to be cooled off from the moment. Hardening cheese and dampening dough will inescapably lower the taste of pizza. I searched related books, advanced patent technology and the Internet but it was impossible to find a vessel to work out this problem. Finally, I decided to make it by myself.” 

However, it was no wonder that no one was able to solve this problem for a long time. It took three years and expenses of more than 100 million won to make a vessel that allows delivering heat evenly to the entire vessel with durability and without difficulty in use and management. In this period, the vessel devised first in the shape of a tube gradually changed into a form of plate while one part detailing into a total of 19 parts. ‘Candle pan’ developed this way is relatively even in temperature (within 10 degrees) between the center and edge, smooth in discharging moisture and has come into the world with sufficient fuel of only one candle. CEO Lim expressed his thanks, “In the process of realizing the idea, I received much help from KITECH, Jeju University Startup Support Corps, Smaller Enterprise R&D Support, Jeju Knowledge Center, etc.” 

Success follows when you walk your way with sincerity
With a successful settlement of ‘JEJUMORU’ coupled with development of the candle pan which maintains crispy taste without getting cold or damp from the first to the last piece of pizza, Lim is recently preparing its franchise. He said confidently, “So far I have had no time to care about other things than many researches and developing a candle pan. In the startup market like a battlefield, I was unable to move others without any proper arms in my hand. But I think that I am prepared now,” His decision is that he will be able to captivate consumers through differentiated menus which have obtained love and popularity among many people and the candle pan, the only kind in the world as well as fresh local ingredients. 

But Lim stresses that seeking for self-esteem is as important as success in business. According to him, what matters most when entering into something is not money but how long and how proudly and joyously he can go on with it. He said he hoped the future presented by ‘Moru’ would be a path for startups to have self-esteem in their choice of work as an artisan. What could be the picture of the ‘happy success’ made by ‘JEJUMORU’ and Lim Kyung-mo who says he is aiming at a good cook rather than a self-employed person?
