From a clergyman of underground church to a coffee maker

Finding a true taste of coffee
Taste of coffee is affected by regional environment, cultivating process, the amount of caffeine and roasting methods. Youngmin Kim, the CEO of Cosecha Coffee (http://cosecha.co.kr/main/index) uses charcoal fire method to roast coffee which was first introduced in the 14th century and he is the talk of the town. 
Kim lived in Guatemala for 8 years and carried out his mission work while learning about coffee in the plantations. When he came back to Korea, he worked as a clergyman of underground church and made coffee by himself for the believers and this led him to make a coffee shop type church. But soon his talent at making coffee spread from mouth to mouth and he eventually started to make products to sell in the market. Thus born was Cosecha Coffee and they acquired permission to make coffee in Many 2014 and started to sell from August the same year.

Born from a clergyman father, Kim grew up by dreaming to follow his father's path. He graduated from a theological school and left for Guatemala on a mission to spread the Bible. Apart from missionary work, he learned about coffee from cultivation, management to roasting in coffee plantations. He came back home after spending 8 years in the country and kept carrying out mission work. But establishing an underground church was not easy as the number of churches were quite full in Korea already and also he did not have enough fund. Then he observed a coffee culture booming in Korea and decided to make use of his experience in coffee making with the idea of combining church with cafe. Receiving positive feedback from the believers and self-confidence, he launched a brand called Cosecha Coffee. 

The charm of Cosecha Coffee
Currently, Cosecha Coffee is made of 10 kinds of coffee bean with Guatemala Antigua and Ethiopia Yirgacheffe as the main products. The former one is smooth and has deep scent with a hint of sourness at the finish and the latter one gives fruity and flowery scent. But the most notable advantage of Cosecha Coffee is that it is roasted by charcoal fire method unlike existing gas heat method used in many coffee shops. It roasts coffee bean in the air by directly touching the charcoal fire and heat. This method in fact is painstaking work as you have to check the heat and the temperature continuously but Kim nevertheless sticks to the method because drinkers can enjoy a deep taste and scent. 

The plan and goal of Cosecha Coffee
Kim currently is working on making a variety of quality coffee products by using direct fire roasting method. Aqua Dutch, for example, is roasted by the method and matured for 3 hours in a charcoal maturing room followed by ripening time in a refrigerator for 3 days to finish. It is smooth and leaves a spicy fragrance in the mouth without giving sour taste so that everybody can enjoy. Kim's goal is to launch a franchise business to provide quality coffee to more people. He is also returning part of his profits to underground churches or to build new ones so that people can more conveniently meet clergymen. Kim's plan is to provide quality coffee to many people and to build church rather than to create more profits. Kim's hard work in pursuit of this goal will never be stopped.
