커피 본연의 맛을 찾아서
최근 가장 젊은이들에게 떠오르고 있는 산업은 커피 산업이다. 많은 사람들이 커피와 관련된 카페를 차리고 운영하는 것을 꿈꾸며, 수요 또한 급성장하여 많은 사람들이 즐겨 찾고 있는 하나의 트렌드로 자리 잡아가고 있다. 커피는 사용되는 커피콩의 종류에 따라 다양한 맛이 나는데 우리나라 사람들이 즐겨먹는 커피콩은 대부분 아라비카 쪽 콩으로 에티오피아, 브라질, 콜롬비아, 멕시코, 과테말라등에서 생산된다. 또한 원두는 품종에 따라 크게 두 가지로 나눠지지만 커피가 재배되는 지역 환경, 재배 프로세스, 아종 또는 변종에 따른 카페인 함량의 차이에 따라 맛과 산도가 달라진다. 로스팅 방식에 따라서도 커피의 향은 차이를 보이는데, 최근 옛 14C부터 사용되던 숯불 직화방식을 이용하여 향이 진하고, 부드러운 맛이 일품인 양질의 커피콩을 만드는 코세챠 커피의 대표이자 ‘커피콩 볶는 목사’인 김영민 대표가(http://cosecha.co.kr/main/index) 등장하여 눈길을 끌고 있다.   

김영민 대표는 과거, 과테말라에서 8년간 거주하며, 과테말라 커피농장을 보며 선교현장에서 사역을 해왔다. 이후 한국으로 돌아와 개척교회 목사로 재임 중, 과거에 커피농장을 보면서 일했던 경험을 토대로 교회에 오는 신자들에게 좋은 커피콩을 직접 볶아 향이 진하고, 부드러운 커피를 나눠주던 일을 계기고 커피숍 형태의 교회를 꾸미게 되었다. 이후 신자들의 반응이 좋고, 주변에 맛좋은 커피를 만드는 목사님이 있다는 소문이 일며 좋은 반응을 보이자, 제품을 생산하여 판매하게 되었다. 그렇게 시작한 코세챠 커피는 2014년 5월 관련 기관으로부터 정식 허가를 받아, 제품을 생산하기 시작하였으며, 8월부터는 생산된 제품을 판매하기 시작했다.

개척교회의 목사에서, 코세챠 커피의 대표까지.
김 대표는 목사의 아들로 태어나서, 유년시절부터 목회를 진행하시고, 봉사 하시던 모습을 보며, 자연스럽게 목사의 꿈을 키워 나갔다. 그렇게 목사의 꿈을 키워오던 김 목사는 신학교를 졸업하고, 과테말라에 선교활동을 떠났다. 이때 선교지에서 보면서 알게 된 커피농장주들과의 만남을 통해 커피 농장에서 그는 양질의 커피콩을 재배하는 법과 관리하는 법, 그리고 로스팅하는 방법 등을 배웠으며, 주변 지인들과 커피를 나누며, 선교활동에 힘썼다. 8년이 지난 후, 한국으로 돌아온 김 대표는 꾸준히 선교활동과 목회를 진행하였다. 그러나 이미 많은 수의 교회가 들어선 우리나라에서 개척교회를 설립하여 운영해 나가는 것은 쉽지 않았고, 재정난 또한 겹치며, 운영에 어려움을 겪고 있던 때, 김 대표는 한국에 커피 붐이 생겨나고 있는 것을 파악하고, 과테말라에서 커피를 직접 재배하고, 로스팅했던 경험을 살려 교회와 카페를 같이 하는 이색 아이템을 생각했다. 이후 신자들을 대상으로 반응을 조사한 결과 좋은 반응을 얻었고, 이에 자신감을 얻은 김 대표는 코세챠 커피란 이름을 내걸고 본격적인 커피 산업에 뛰어들었다.

코세챠 커피만의 이색적인 매력
현재 코세챠 커피는 10가지의 커피콩을 사용하여 제품을 제조하고 있으며, 주력 상품에 쓰이는 커피의 종류는 과테말라 안티구아와 에티오피아 예가체프이다. 과테말라 안티구아는 부드럽고 향이 깊으며, 끝에 신 맛이 살짝 나며, 에티오피아 예가체프는 커피에서 과일향과 꽃향기가 나는 것이 특징이다. 그러나 이런 커피콩보다 더욱 부각되는 코세챠 커피의 장점은 다수의 커피점에서 사용되는 열풍식, 가스의 열을 이용하여 달궈진 공기를 이용해 커피를 볶는 방식이 아닌 숯불 직화 방식이다. 숯불 직화 방식은 커피콩을 불에 접촉시키는 방식으로, 숯의 뜨거운 열기를 생두에 직접 접촉시키며 공중에 띄워 볶는 방식이다. 직화 방법으로 콩을 볶을시 숯의 열기가 일정치 않아, 숯의 열기를 일정하게 만들고, 적절하게 온도를 유지하기 어려우며, 커피콩을 볶을 때, 계속적으로 체크해 줘야하는 어려움이 있으나 김 대표는 이런 어려움에도 불구하고 직화방식을 고수하고 있다. 이유는 직화방식으로 볶은 커피의 경우, 숯불에 직접 커피콩이 접촉되다보니, 일반 공장에서 생산되는 커피콩들에 비해 그 향이 짙고, 오래가며 커피에 숯불의 향이 골고루 배어있어 커피를 마시는 사람이 커피의 깊은 맛을 느낄 수 있기 때문이다.

코세챠 커피의 계획과 목표
김 대표는 현재 직화 방식을 통해 볶은 양질의 커피를 이용하여 다양한 신제품 개발에 힘쓰고 있다. 그런 그의 노력으로 최근 개발된 아쿠아 더치는 커피콩을 직화 방식으로 볶아 3일간 숯 숙성실에서 숙성의 시간을 거친다. 이후 다시 냉장실에서 3일의 숙성 기간을 지나 완성되는데 커피 특유의 부드럽고, 고소한 향이 입안에 오래 남으며, 커피의 씁쓸한 맛을 최소화하여 남녀노소 누구나 아쿠아 더치를 즐길수 있는 것이 특징이다. 이외에도 코세챠 커피를 대리점 형식으로 운영하며, 대중들에게 조금 더 양질의 커피를 제공하는 것이 목표이다. 또한 코세챠 커피를 통해서 생긴 수익을 통해 운영이 어려운 개척교회를 돕고, 교회가 없는 곳에 교회를 새로 설립하여 조금 더 많은 사람들이 가까운 위치에서 목사를 만날 수 있는 장소를 만들기 위해 노력하고 있다. 많은 매출을 내기보다는 질 좋은 커피를 만들어 사람들에게 제공하고 많은 사람들에게 먼저 다가가는 교회를 만들고 싶다는 김영민 대표는 오늘도 사람들에게 좋은 커피를 제공하기 위해 구슬땀을 흘리고 있다.

Finding a true taste of coffee
Taste of coffee is affected by regional environment, cultivating process, the amount of caffeine and roasting methods. Youngmin Kim, the CEO of Cosecha Coffee (http://cosecha.co.kr/main/index) uses charcoal fire method to roast coffee which was first introduced in the 14th century and he is the talk of the town. 
Kim lived in Guatemala for 8 years and carried out his mission work while learning about coffee in the plantations. When he came back to Korea, he worked as a clergyman of underground church and made coffee by himself for the believers and this led him to make a coffee shop type church. But soon his talent at making coffee spread from mouth to mouth and he eventually started to make products to sell in the market. Thus born was Cosecha Coffee and they acquired permission to make coffee in Many 2014 and started to sell from August the same year.

Born from a clergyman father, Kim grew up by dreaming to follow his father's path. He graduated from a theological school and left for Guatemala on a mission to spread the Bible. Apart from missionary work, he learned about coffee from cultivation, management to roasting in coffee plantations. He came back home after spending 8 years in the country and kept carrying out mission work. But establishing an underground church was not easy as the number of churches were quite full in Korea already and also he did not have enough fund. Then he observed a coffee culture booming in Korea and decided to make use of his experience in coffee making with the idea of combining church with cafe. Receiving positive feedback from the believers and self-confidence, he launched a brand called Cosecha Coffee. 

The charm of Cosecha Coffee
Currently, Cosecha Coffee is made of 10 kinds of coffee bean with Guatemala Antigua and Ethiopia Yirgacheffe as the main products. The former one is smooth and has deep scent with a hint of sourness at the finish and the latter one gives fruity and flowery scent. But the most notable advantage of Cosecha Coffee is that it is roasted by charcoal fire method unlike existing gas heat method used in many coffee shops. It roasts coffee bean in the air by directly touching the charcoal fire and heat. This method in fact is painstaking work as you have to check the heat and the temperature continuously but Kim nevertheless sticks to the method because drinkers can enjoy a deep taste and scent. 

The plan and goal of Cosecha Coffee
Kim currently is working on making a variety of quality coffee products by using direct fire roasting method. Aqua Dutch, for example, is roasted by the method and matured for 3 hours in a charcoal maturing room followed by ripening time in a refrigerator for 3 days to finish. It is smooth and leaves a spicy fragrance in the mouth without giving sour taste so that everybody can enjoy. Kim's goal is to launch a franchise business to provide quality coffee to more people. He is also returning part of his profits to underground churches or to build new ones so that people can more conveniently meet clergymen. Kim's plan is to provide quality coffee to many people and to build church rather than to create more profits. Kim's hard work in pursuit of this goal will never be stopped.
