‘Research artist’ in the handmade chocolate world of Korea

if you are a handmade chocolate buff, you will remember Eily’s chocolate which has impressed you with the legitimacy and individuality representing Korea at Salon du Chocolat. Elly’s chocolate has such a wiry little body and intelligence that it doesn’t fear the blitz from global large enterprises selling handmade chocolate such as Debauve & Gallais or La Maison du Chocolat. Power Korea Monthly met the president Kim Seon-hee, an expert in the value and attraction of chocolate, in an attempt to approach chocolate academically with a comprehensive point of view.
Keeping the pride of a Korea’s handmade chocolate brand with a study on chocolate
As a studious CEO, Kim Seon-hee of Elly’s chocolate is soon graduating from Sejong University graduate school of restaurant administration. Last year, President Kim composed tuning Eowoodong, Point shoes of princess Odette and romantic Tutu for chocolate to promote the beauty of chocolate and successfully proved the fact that Chocolatier is a general artist.
While opening and running an offline shop for Elly’s chocolate near Sejong University to make people recognize handmade chocolate, President Kim still keeps a very warm aspiration for chocolate. She is busy preparing her thesis and says that she took interest in the theory of chocolate because there were few research data dealing with artistic value and consumption of chocolate and its analytic food and nutrition, though there were many for marketing and branding. “That’s why I went into study on hedonistic elements and functions related to chocolate suited for the reality of Korea.”
She is writing a thesis by sorting eaters with consuming motive by gender, age, occupation, etc. “When I made a survey in France, it was impressing that chocolate was consumed by diverse age groups from 20’s to 50’s.” While preparing her thesis she needed data of Salon du Chocolat, and friendship with a French person concerned who participated in the Seoul Show made her represent Korea for the first time at the 20th anniversary conference of Salon du Chocolat. President Kim’s presentation of ‘A study on the Korean experience of chocolate consumption and its market’ received a strikingly favorable review because it compared consumption experience by gender (experiential and functional motives) and method of intake with the existing research data.
“My data was welcomed because it would be of great help in their advancing to Korea for business marketing. While other participant’s data was restricted to their country’s chocolate history, cacao bean’s process or manufacture, my study was prominent because of adding more professional and scientific research.” The research data was also used helpfully for her thesis. President Kim recalled the difficulty she had had so far. “There were difficult parts in citing foreign data from articles, but all in all, it was a fruitful and rewarding time. After finishing this thesis I will enter a doctoral course and concentrate on the study to help domestic industry with another chocolate-related topic.
And I am working on a new subject matter on purpose to participate in this May International Conference with a study on chocolate. I find it pleasing to research and learn the information of chocolate, which was unknown when I was running a shop or making the product myself.” She is absorbed in the work of subdividing chocolate. “In Korean learned circles, there are many theses on cacao processing process (bean to bar), chocolate packing design, cacao-added food components and the purchase form on an event day.
However, I am the first to write a thesis on chocolate consumption itself which is more essential. I will provide systematic information starting with basic marketing for those in chocolate industry. I want to present how to make our own brand survive in Korea’s handmade chocolate market which is currently relying on foreign brands. President Kim explained that recently there is a growing interest in chocolate craving. “It is the research on why people like chocolate and its value. Incidentally, there was an opinion of feeling guilty from liking it too much. This shows the ambivalence about chocolate between fear of calorie and occurrence of a carious tooth, and its sweet taste.”
In another thesis, she is going to survey by putting on control groups the people eating simply for liking, inhibiting chocolate because of the social norm in dislike of fat people, and eating only occasionally on a social event. The former is said to eat chocolate when tired or wearied to feel happy or soothe oneself, while the latter eat chocolate on a special day in a social or cultural context feeling guilty. That is, she became aware that the motive of touching chocolate makes difference in social, cultural and psychological results. She also wants to make study on the attitude toward chocolate held by little children by sampling them. With this relation, she has been carrying on with many cooking classes which is loved by children.
Besides, for president Kim, February is oriented toward the Valentine Day, a high-demand season for all chocolatiers. So according to the sales strategy of 6W-2H about when (February 14), where (at the shop), who (Elly’s chocolate), whom (women in their teens and twenties), what (chocolate) and why (to signify one’s true heart to another in love), how (promotional event: flower or card…) and how much (setting a budget for supply and demand), she is thoroughly making preparations knowing the importance of packing, reading related articles and working on design.
As an florist, too, president Kim is going to deliver the beauty of flowers along with a package on this Valentine Day. Besides her love for domestic market, president Kim is also preparing for a foreign market. She is knocking on the possibility of showing her talent as a global formative artist once again at the fashion show for chocolatier ‘Chocolate Cacao Show.’
President Kim is an expert at chocolate wearing for hats as a manager, manufacturer, plastic artist and researcher. What and how much output she will show in 2015 is really the thing we want to know.
