<Hobak Restaurant> the midas touch in the food industry

Hobak family has emerged as a new strong company which run 6 hit food brands: Japanese style yakkiniku wagyu restaurant 'Hobak Restaurant', Korean beef restaurant 'Hanwadam', Jeju pork belly restaurant '369 Container', fried chicken & beer restaurant 'COCO', spicy beef rib stew restaurant 'Mansikine', and beef intestines restaurant 'Sunja Korean Beef Intestines'. Especially the manin brand Hobak Restaurant is specialized in Japanese style beef called 'wagyu' and grilled beef called 'yakkiniku' and it has been loved by many since its opening in 2009. The brand has currently 7 chain stores including the directly managed store in Hannam-dong, Seoul and people still have to line up to taste it. Korea's top bilingual magazine Power Korea has met Kim who achieved $10m sales and heard about how to be a successful start-up.

Kim said the very start of a food business is at its possibility. When launching a business Kim focused on the demand and market potential rather than personal preference. Of course taste, concept, location and marketing are basic elements. Kim once was an athlete and he used athlete's endurance and desire for winning to achieve $10m sales. Kim said "as I didn't have any knowledge about food business I decided to start from the very beginning. I knew I would succeed if I carried on with tenacity. I learned everything from chores to management and this became the driving force of my all 6 brands."

Kim chose Wagyu and Yakkiniku which were less known at that time and combined these two items with popular Korean menus. It was a strategy of reinforcing specialty with new items while reducing its risk with popular items. But the decisive factor was at the reasonable price of beef. Kim said "we only use the best Japanese black cow raised in Australia and I chose the beef and simplified the distribution system to maintain the good price."

As Wagyu is not familiar with the Korean people Kim exposed how to season and mix the meat in front of customers to give extra fun. Kim also provided side dishes such as steamed eggs, beef brisket soybean paste stew, and salads. Especially, crispy and spiced green onion and thin sliced onion with special sauce are particularly good. In addition, 7 kinds of traditional Korean meals for lunch are very popular and the self-bar menu(soup, scorched rice soup, black soybean sauce, stir-fried rice cake, curry) can be enjoyed at a cheap price without limitation.


Franchise for the owners of member stores

Another reason Hobak Restaurant is different from others is at its heart-warming customer service. Kim knew how important this is and has been trying really hard to satisfy every single customer. He started free-valet parking and installed a large TV set and an air-conditioner in the reception room and provided coffee and slushie while they are waiting for a table. Kim issued a discount coupon for those who waited long and paid the fine if customers got his car parked illegally. 

During those times, Hobak family has been looking for the possibility to run a franchise. As the recognition of the brand increased the inquiries about franchise were surged in. So Hobak Restaurant launched franchise this year on the benefit of the member stores rather than their own profits. Kim said "the existing franchise made their profits through interior, distribution, and store expansion which were a financial burden for the member stores. But we recommend the member stores to carry out all those process by themselves. Although this cannot bring us an immediate profit, it's more meaningful that we cooperate."

Kim predicted the year 2015 as positive for the food industry but added that the government's support is needed as the system and development plans are weak compared to other industry.

Power Korea is looking forward to seeing Hobak family being a model for the Korean food industry and hope for those who dream to start a business.
