이원희 대표는 요식업에서 다양한 경험을 갖고 있는 베테랑이다. 민물 매운탕과 메기, 장어 백숙 등을 선보이며 1000평 규모의 한옥식당을 운영했고 3년전 불황을 극복할 수 있는 아이템으로 점심과 저녁메뉴를 구분해서 영업하는 복합형 매장을 만들기 위해 서현동에 자리를 잡아 인근 지역은 물론 타 지역에서도 최고의 맛집으로 인기를 얻고 있다. 입구부터 전통한옥분위기의 고풍스러움을 풍기는 이곳은 이는 이미 각종 언론사에서 맛집으로 선정되는 쾌거를 불러일으켰고 현재도 다양한 음식을 선보이는 식당, 특별한 메뉴를 선보이는 식당으로 사람들에게 불려지고 있다. 이곳의 대표메뉴는 소공동뚝배기를 비롯해 국내 최초로 이원희 대표가 선보인 헛개왕족발과 직화구이이다. 각종 천연재료와 국내산 헛개열매 껍질을 넣고 매일매일 삶은 100% 국내산 생족을 사용하는 헛개왕족발은 색감과 눈으로 보는 맛은 물론 육즙이 살아있어 한 번 맛보면 계속 생각나기에 마약족발이라고 불리기도 한다. 더욱 이색적인 것은 인기가 많음에도 불구하고 하루 50개의 한정 족발만 판다는 것이다. 그래서 헛개왕족발을 맛보려면 일찍 가야 쉽게 맛볼 수 있다. 이곳의 또 하나의 자랑거리는 바로 직화구이이다. 제육, 오징어, 낙지, 섞어직화로 구분되는 직화구이는 직화의 은은한 향과 매콤새콤함이 더해져 사람들의 입맛을 사로잡고 있다. 이 밖에도 보쌈, 쟁반 막국수, 짬뽕탕, 문어숙회, 왕족발과 왕문어 비빔의 왕비, 순두부뚝배기 등을 즐길 수 있다. 이원희 대표는 “내입에 들어갈 음식이라 생각하고 어느 것 하나 소홀히 하지 않는다. 항상 정직함을 바탕으로 요리하기에 더욱 좋은 맛을 내는 것 같다”며 “음식점은 양질의 신선한 재료를 사용해 최고의 맛을 내는 것도 중요하지만 음식을 파는 이들의 양심과 정성이 더해져야 한다”고 전했다.

현재 이원희 대표는 서현동 한양왕족발&소공동뚝배기를 비롯해 왕비가라는 곳을 운영 중에 있다. 이곳들은 150평 규모의 대형매장이지만 내년부터 본격적으로 준비 중인 이씨부엌은 소규모의 매장으로 창업주들에게 그간의 노하우를 바탕으로 상생할 수 있는 현실적인 브랜드를 만들겠다는 것이다. 그간 많은 창업전수를 해오며 겪어왔던 과정을 한대 모아 헛개왕족발과 직화구이만을 선보일 계획이다. 15~20평으로 계획되는 이 매장들은 소규모의 복합형 매장으로써 은퇴 후의 창업주들에게 희망을 선보이기 위함이다. 이 대표는 “이씨부엌은 오랜 기간 레시피를 연구하여 작업과정을 단순화 시켜 창업자들이 쉽게 오픈 할 수 있도록 준비 할 예정이고 누구나 즐길 수 있는 메뉴이기에 약 1달 정도의 교육을 받으면 쉽게 창업할 수 있다”고 전했다.

With its economic growth, S. Korea has now become one of the powerful countries. As a result, more people are looking for healthier and tasty food. But it is not easy to find a right restaurant which can satisfy the people. However, there is a restaurant which is the talk of the town: Seohyeon Hanyang King Pig's Feet & Sogong-dong Earthen Bowl located in Seohyeon-dong. Many TV channels and the press chose the restaurant as one of the best. The CEO Wonhee Lee developed unique menus by herself and she manages the restaurant with her philosophy: Customer's dining table is my dining table.
The secret of consistent taste is equal to the owner's mind.
Lee is a veteran who has various experiences in the food industry. She once ran a 3,000 square meter Korean house style restaurant which sold fish stew, catfish, eel and chicken soup. Then she opened the current restaurant three years ago and started to provide different menus for lunch and dinner. The restaurant is an archaic Korean style building and selling various food with some specialty. The main menus are Sogong-dong Earthen Bowl, grill and Hutkae Pig's Feet which she introduced for the first time in Korea. The pig's feet is made of 100% Korean pig's feet, natural ingredients and the skin of hovenia dulcis fruit. It is boiled everyday and its color and taste instantly attract people. That is why it has a nickname as a narcotic pig's feet. Interestingly, Lee sells it no more than 50 in a day. If you want to taste it you should get there earlier. Meanwhile, the grill here provides another pleasure. Pork grill, squid grill, small octopus grill or mix-it-all grill with its delicate scent and spicy taste catch the people's appetite. Other menus include boiled pork, buckwheat noodles, raw octopus, pig's fee & king octopus mix, and soft tofu earthen bowl. Lee said "I make the food like I make it for myself based on the true ingredients. It is important to use fresh and quality ingredients but even more so is the cook's sincerity and conscience."
Introducing Lee's Kitchen for franchise.
Lee is also running another restaurant Wangbiga. It is a 450 square meter restaurant. But Lee has a plan to run small size restaurants called Lee's Kitchen from next year. The franchise will only deal with Hutkae pig's feet and grill on a 60 square meter space. It is specifically designed for retirees who want to start a business. Lee said "every start-up can learn the menu in a month as I simplify the recipe and the cooking process so that they can start the business without difficulty." Lee has an ambition to conquer the people's appetite through Lee's Kitchen. The birth of a new concept franchise in Korea will surely cause a sensation in the food industry.
