Lamb has lots of protein, calcium and minerals and the flesh of it is quite tender compared to other meats, therefore, cooking with it is treated by a premium food. However, it wasn¡¯t popular in Korea due to its certain smell. So, people didn¡¯t eat that meat pleasantly. But, for last some years, lamb restaurants have increased and even more Koreans are looking for good lamb restaurants, so it seems eating the meat seems popular. By that, Power Korea met CEO Kook, Ok-Hyeon of <Pungmu Lamb Skewers> who has been working in the food business for 10 years for taking a part of making the lamb popular. 



The biggest Chinese lamb skewers professional franchise, <Pungmu Lamb Skewers>

It is saying that lamb skewers used to be sold at the market since Uighur from Xingang in China came to a big city after reformation open and its particular taste got popularity throughout China. Nomadic tribes were enjoying the food as a stamina health food, and they used metal skewers to eat lamb meat easier on the grill. Then, later, they could use seasonings via Silk Road. It is how they could make it taste better. <Pungmu Lamb Skewers>¡¯s head shop in Yian-Ji and it is the biggest lamb skewers franchise company in China. There are restaurants in Chinese main cities such as Beijing, Shanghai, and Tsingtao including 70~80 direct management and membership ones. <Pungmu Lamb Skewers> opened in 2001 first was the first Korean franchise and it started the same basc concept with the headquarter store in China. By that, CEO Kook explained, ¡°We are using the same foods, dishware and equipments that are used in China as well. It is all about delivering the same feelings in there, so I imported everything from there. And, to keep the original taste, we are following their recipes exactly.¡± 

Lamb used in <Pungmu Lamb Skewers> are from Australia and using young meat, which is lamb we are calling, so the texture is tender and there is no certain smell whatsoever. 



Starting the franchise business after setting up for a franchise system 

The most popular meals are lamb skewer and lamb chop, which have their natural taste in itself. Lamb skewer is a menu that people eat after brushing some mix powers made with cumin seeds and pepper with cooked lamb skewers roasted by charcoal grill equipment. Probably, someone who tasted it for the first time, the flavor is not used to have it but, if you eat a few times on purpose, you will get addicted to the food. Also, lamb chop is been taken tendons by hands, so the meat texture is so tender as a feature and there are wine and herb salt to get rid of bad smells completely and then, people grilled it with direct fire. Currently, <Pungmu Lamb Skewers> has three restaurants in Daelim, Guro Digital Complex and Bucheon. After all, there are many lamb restaurants in a good business because of his efforts to make it popular. CEO Kook who has been devoted himself to the promotion for 10 years since he opened this business in 2001 expressed his goal. ¡°It is supposed to be finished to set up for the professional franchise system in the first half year. Being basic is most important. As the headquarter restaurant in China was like that, I will do my best to prepare for that people in everywhere in Korea can taste foods at <Pungmu Lamb Skewers> soon.¡±
