<Makanai>, a Japanese restaurant in consideration of the Koreans¡¯ palate

Settles as the best gourmet restaurant at the University Of Seoul 


CEO Lee Seung-woo launched a Japanese restaurant when he returned from Japan after studying cooking as the first step to realize his dream. When the head office opened in February 2011 in the neighborhood of the University of Seoul, this place soon became the hangout of the college students who had been complaining about the absence of gourmet restaurant near the campus. ¡°Makanai means the meal given to coworkers in a Japanese restaurant. I took the name for this place thinking I should regard customers as my own family members.¡±

Actually, CEO Lee remembers much about his customers ? what they are majoring in or who are their close friends, etc. This place has become famous for gathering loyal customers, but beneath it were hidden efforts of CEO Lee, who wanted to serve a warm-hearted meal like their biological brother. Makanai¡¯s main menu is Ramen (instant noodles), curried rice, a bowl of rice topped, etc. all being sold at a reasonable price of 6,500 won. Especially, each menu can be enjoyed at level 1 to 4 in being hot, while CEO Lee is carrying on with an event of taking pictures with a Polaroid camera each time a person has conquered the pungent taste. Polaroid pictures filling up Makanai¡¯s one side of walls like part of interior design contains diverse stories and happy smiles of the friends and lovers who have been here together. ¡°I tried hard to find a Korean taste though dealing in Japanese food. It must be a high technology to implement the local taste as it is, but on the contrary, isn¡¯t it a great technology to serve food to Korean people¡¯s palate?¡± 

There must be some who succeeds to the tradition of arts and food culture from diverse cultural circles and others who must develop that culture and enable more people to enjoy it. That¡¯s why CEO Lee is laying the bridge so that Koreans with a considerably keen and finicky taste may enjoy another taste of Japanese food more easily and comfortably.


Will build up into a substantial franchise  


As Makanai went viral online as a gourmet restaurant, there has been a flood of inquiries about franchise. However, CEO Lee has worries about franchise business which has poor viability in proportion to exponential growth. ¡°What matters most is to build it up as a longtime loved brand while insuring substantiality. I am expecting that the head office and members will achieve win-win buildup in a family-like atmosphere.¡±

Franchise he conceives is basically characterized by an ¡®owner-chef system¡¯ in which the shop owner must engage in cooking himself. It is because to survive in the restaurant business of infinite competition, the manager¡¯s own cooking is the way to reduce the big labor costs, manage carefully on ingredients and implement a certain level of taste. To that end, the shop owner must learn cooking for a certain period from the head office. Since the head office secures systemized education and continued management from the initial stage, anyone seems to be able to realize the dream of a small-capital startup easily.   

In the meantime, CEO Lee expressed his agreement on the government¡¯s plan to touch off a boom in the startup market. ¡°But one thing, I would like to point out the failure in post management. If the government approved a loan at the time of startup, it is not fair to make them repay even before settling after the opening. In my eyes, for about one year after startup, they should be practically supported with the benefit of tax reduction, etc. It is the way to break out the vicious cycle of repeated startup and closing and prepare the basis for economic growth.¡±

Saying he hoped Makanai would be remembered among customers as a gourmet restaurant making constant efforts, CEO Lee promised to present an advanced taste of Japanese food by developing diverse menus. CEO Lee Seung-woo says that now is the time to get off the ground. It would be nice if we could taste the Makanai¡¯s delicious gourmet food anywhere in the country sooner.
