Hangwa, Korean traditional confectionery, 

deserves to be registered as UNESCO's world heritage.

- Mr. Kim Kyu-heun is president of ShinKung Traditional Confectionary as the only state-designated grandmaster of traditional confectionery and director of HanGaOne  



Every world-famous cookie has its own history. German Schneeballen has festivity and wish as its origin, French macaroon the refined royal confectionery diplomacy, British Brownie affection with which to hand-make nutritious cookies, and Spanish sponge cake has its origin in the gift of birthday cake.

Our Hangwa has given us the sweet pleasure since the "Three Kingdoms Period," counting as an exceptional kind of cookie including all the above origins.  

It is in the master Kim Kyu-heun asserting he can capture the taste of people across the world where I could see a bright future of this Hangwa.


He showed the true color of Hangwa unknown so far.

Grandmaster of Hangwa, Mr. Kim defines it as follows:

Koreans live their whole lives along with Hangwa: They are with it at their weddings and anniversaries of birth, and at their funerals as well. 

Hangwa is often called "Gwa-jeong-ryu", which comes from the tradition of using it as fruit in the winter. On the outside, it is similar to other foreign cookies baked from grains, but it also contains other ingredients such as medicinal herbs, nuts, and fruits. Furthermore, the vegetable ingredients ensures its safety as a food. The high sugar contents also makes possible its long-time storage. 

Despite these good qualities, it missed the chance of advancing into the world market and lost its past glory to the surging Western-style cookies. Last year, however, the Hangwa market, once booming only in holiday seasons, marked a surprising sales record of over 200 billion won, which was mainly due to its gentrification, targeting diverse age groups, and last but not least, the efforts of  masters who devoted their whole lives to improving Hangwa. 

Most unique of them, Mr. Kim the president of ShinKung Traditional Confectionary was state-designated as a master craftsman of Hangwa in 2005 and, in 2013, as the only grand master for the first time in Korea. He could solidify his fame as a Hangwa master who gives competition to it in the world market. 

As is the case with all master chefs in the world, Mr. Kim always start his day early at dawn. He is not only the boss controlling the process of making Hangwa, but a cuisine researcher on Hangwa. He is a late learner, turning 60 years old, of hotel cookery as a missionary of Hangwa.

He said that a gift of Hangwa from his wife, who comes from a family making Hangwa, led him to start his career as a Hangwa craftsman. Since 1981 when he found the ShinKung traditional confectionery, he has lived a life wholly dedicated to making and studying Hangwa.



He has promoted to the whole world Hangwa with a variety of kinds and tastes.

President Kim said he has approached Hangwa as a food everyone can enjoy,  whether it is for memorial service or gift. First, he realized that Hangwa has a long history. For example, it had developed into a total of 254 kinds until the Chosun period, which allows for the various applications of its ingredients and making processes that no other cookies in the world has ever experienced.

In addition, he could find many other competitive edges in Hangwa, and that is why he reduced its sizes for a better taste and tried more beautiful designs for a better look. The idea of individual packing for an easier carrying was also tried by him for the first time, which is well received by consumers.

Another good quality of Hangwa is that its ingredients can be mixed together or applied to the surface. They can also be used for decorating purposes.

Hangwa consists of Yumil famous for Yakgwa and Dasik, Yugwa derived from rice Gangjeong, Suksil similar to candies, Dasik similar to the royal Macaroon, Gwapyonryu(Korean traditional pudding), Jeonggwa adding flavor and good look to Gyongwaryu, and Gangjeongryu familiar to Korean people for a long time. All of these kinds are good individually or in a set.

Mr. Kim cherishes the value of these traditional Hangwas, thus promoting them overseas himself though he has more than 300 apprentices, and it's because he believes Hangwa, combined with good look, flavor and nutrition, can serve as a cultural mission overseas.

So far, he can create admirations about Hangwa of foreign cookie experts, through its displays and promotions held in more than 50 countries. The Cordon Bleu reported that the master chefs, who received Hangwa as a gift, appreciated it as an "art rather than a cookie and a food better than medicine."



For Display of Hangwa in UN's General Assembly and UNESCO's Heritage Listing 

During the 34 years of his life wholly dedicated to Hangwa, he had many moments of honor, including the selection of Hangwa as an official desert in the ASEM assembly and the state-designations of him as Hangwa master craftsman. But he also had to experience many painful moments. 

While improving the taste and quality of Hangwa, he lost one finger. He even suffered from a traffic accident due to overwork. In 2001, a big fire caused him great property losses. 

In the course of events, he could make the good qualities of Hangwa widely known, which has helped the promotion of our agricultural products and our traditional culture.

Hangwas, made by Shinkung, contributes to the increases in income of farmers who supply ingredients for Shinkung in the Pocheon area, and those products of Shinkung can maintain their best taste with the benefit of newly-introduced automation processes and technologies of lengthening expiration dates without using artificial preservatives.    

Mr. kim also developed medicines suitable to the concept of well being, leading to the development of functional Hangwas for young Koreans and foreigners. 

The set of hand-made Yakgwa was created under a joint study with doctors of food and nutrition at Ewha Womans University, now gaining popularity for its individual packing and soft texture.  

President Kim, who has so far developed more than 150 modern Hangwas, opened HanGaOne, a Hangwa culture museum, in 2008. It was aimed to promote the history of Hangwa as a ritual and fancy food, at his own expenses plus with the support of the government and municipality.  

In HanGaOne, you can see displays of historical relics and data about Hangwa, covering from the "Three Kingdoms Period" up to the present. Programs are also ready there for you to experience the Hangwa-related culture. 

"I think I should give back to society the glory of being a grand master of Hangwa. It is my old dream that Hangwa is displayed in UN's general assembly and listed as UNESCO's world heritage. I will make my family inherit the history of Hangwa by handing down all my skills to my children studying Hangwa." said the grand master Kim, and somehow, I could find in his sincere voice the quietness of Dasik, patience of Yumilgwa, and decency of Jeonggwa.
